Hey,

What do people remember about side meat?

If you do not know ask someone older that you.

What is Pork Side Meat?
Side meat was bacon that had been cured but not brined - basically strips of salty pork belly that was... Boy, that's an old phrase. Side meat was bacon that had been cured but not brined - basically strips of salty pork belly that was fried up like bacon.

Any idea on this and is it any good?
 
Side meat and fatback. Seasoned many a pot of beans, collards or about anything else with both.

ETA: Jowls work well for seasoning also. Really about any fatty part of the pig added to a pot of fresh vegetables is good.

We called it "middlin' meat". It was cured and hung up in our smoke house with the cured hams and shoulders.
 
Salt cured pork side. Cured with the skin on in a smoke house or out building when the winters were cooler than they are now.
Good to season or fry up, bad for high blood pressure.
Rinse most of the salt off before cooking.
 
......yes cook pintos or black eyed peas with hog jowls, i didnt know any other way.

You can see the middlin meat hanging with the hams and shoulders in my basement. Basically its the belly of the hog and makes up most of what we call bacon....Gods Perfect Food.

Side note- with my family getting older and not handling the fat in it to flavor beans and such, I have started to use smoked turkey neck and wings. Still gives it great flavor ( add some cumin power, thank me later) but keeps my mom out of hospital with pancreatic attacks lol

If you look at the pic above you will see a portion of the ribcage that had some meat on it and I cured/smoked it to just add flavor without the fats. Smokin a bone aint just for the stoners.
