Not fall off the bone but very tender and tasty.

I left some meat on one of the bones and gave it to Pixie and made her go outside with it. I went to take her picture and she thought I was going to take her bone away. LOL

Make sure she doesn't crack the bone and do damage. That reminds me; I need to get get some meaty beef ribs and smoke them. Grocery store beef ribs suck, but a good butcher shop ought to be able to hook me up. Love beef ribs.
 
I had to work. Leftovers tonight. Thank goodness there was enough.

I have ribs rubbed for tomorrow. Can't wait!
 
Tonight, Baked Pecan coated Cod for me, Pecan coated Tilapia for my wife, Brown Rice, and Asparagus.
 

Did you make your own broth. I have a good recipe for it but it is a time intensive process.
Used organic bone broth, a charred onion, some ginger, part of a apple ,schezuan pepper corns, and Chinese five spice.
Pressure cooked for 20min then strained.

Cool. I make it from bones with a little brisket, charred onions etc... don't use a pressure cooker but that give me some ideas. I used to eat Pho all the time when I lived in the DC area. Pho 75 is some of the best Pho in the US.
 
Tonight: club sandwiches made from homemade bread.

No, it's a poolish recipe. The schedule works out that I can make the poolish and let it ferment overnight, mix the final dough in the AM, and bake it when I'm home for lunch.

Nice do you bake it in a dutch oven or straight in the oven?
 
This was my first time baking it in a Dutch oven and will probably be the only way I do it from here on.

It really helps that kind of bread. Consistent temp and allows for a nice crust and crumb. Nicely done the bake looks great. Good air in the dough!

Tonight, Chicken rollers stuffed with Spinach , Feta cheese, and tomato. Homemade Macaroni & Cheese, and Broccoli & Pepper salad.
 
Had a feast at Mama'a yesterday. Bacon-wrapped backstrap, turkey, ham, sweet potatoes, mashed potatoes and gravy, green beans, corn, macaroni and cheese, rolls, and pecan pie for dessert (or lemon or pumpkin). The dog was bummed that he didn't get any, but I brought him a deer femur. Good day all around.

I've been eye balling one of these steaks at Sam's Club for several months and decided to pull the trigger for this Holiday weekend. It turned out very good. Shrimp as always are from Saltwater Seafood on Fenton Street in Raleigh (off Capitol Blvd South). Both cooked sous vide; steak @127F for 3 hours and shrimp @133F for 30 min. Just salt and pepper with two rosemary sprigs and a splash of olive oil for the steak. Butter and plenty of crushed garlic for the shrimp, then salted just before hitting the grill. Hardwood charcoal with a lump of Hickory.
