It is funny. The skirt steak used to be the “throw-away” meat from the carcass. Now that fajitas are popular, it costs more than steak.

The same happened to chicken wings....

And pig feet, cracklin's, and some of our other long time delicacies have met the same fate. :(:(
 
Two pork loins tied together, oil, salt and pepper. Browned them with diect, then moved them to finish indirect with a chunk of wood on the coals. My wife said it had too much of a smoke flavor but I thought it was great. By far it was the best tasting meat from the weber to date. I really am enjoying charcoal again after use gas for so long.

Not tonight but on Saturday we had our annual "Godfather" day. We watch Godfather & Godfather II we don't watch 3 because it sucks we substitute Goodfellas instead. We cook tons of Italian food and drink wine.

So we had homemade meatballs and sausages in marinara gravy served over thin spaghetti, 9 layer lasagna with pork, veal and beef, eggplant parm, salad, bread & homemade cannoli for desert. I even made the cannoli shells from scratch. The shells were not pretty but they tasted great.

Pho Vietnamese Noodle Soup. Made the stock from scratch. Beef bones, Ox tail, bone in short ribs, chuck roast simmered in water with charred onions & ginger for 6 hours. Served with thin sliced eye round, thai basil, cilantro, bean sprouts, jalapeño slices and onion

I will send out an alert next time we do it. Today I am working on a Sous Vide Carnitas with refried beans, mexican rice and guacamole. Will post pics later.
 
Sous Vide Carnitas. Sous Vided the meat with aromatics for 18 hours at 165. Then made the rest of the toppings, guacamole mexican rice and refried beans. Took the Carnitas and broiled it to crisp it up and finish its flavor. Served it with cold Modelas.

The beans were a little dry but added some cooking liquid and they smoothed right out.

Well, we both have had seafood cravings lately.

Tonight steamed lobster and spinach salad with bloodorange vinaigrette.

Tomorrow - smoked salmon, roasted oysters and whatever veg I dream up over the course of the day. Will also start curing process for gravlax with a portion of the salmon. We will have some really nice breakfasts beginning Tuesday.
