By the way, I make my own hot wings. My sauce is super simple, but delish. Butter and Pete. I amount of Pete I add depends on how hot I want it. Usually my mix is 5 t0 6 tbsp of Pete to 1 stick of butter. I would like to find a thickening ingredient that will help the sauce to stick better, without changing the taste of the sauce. I tried cornstarch, but not too impressed. So far honey works best, but does change the flavor somewhat. Any suggestions would be appreciated. THANKS!

The original Anchor Bar wing sauce is basically just Frank's, butter, and cider vinegar. That's how I make mine. It sticks well to crispy fried wings.

If you need a thicker sauce for some reason, I would suggest a little bit of xanthum gum. Be very judicious with it though. A sprinkle while the sauce heats up. Use too much and it adds a terrible mouth feel/texture.

When I use just the butter and Pete, it is pretty watery. Just want to thicken it up enough to give the wings a good coating of sauce, without altering the taste much if possible. The taste of just the butter and Pete is awesome. What brand of butter do you use? Maybe that would make it thicker.

Pretty much any unsalted butter. It occurs to me that Frank's is a bit thicker than Texas Pete too.
 
As others have said, each has it's place depending on flavor profile to be achieved.

I have a whole shelf in the fridge and a whole shelf in the pantry dedicated to "hot" sauces. I also make many of my own sauces and rubs.

Always put the sauce on after cooking the wings- too many people try to put all their heat in before cooking and cooking just makes hot sauces milder and you end up with weird flavors. Franks did at one point have a "wing sauce" version that was a lot thicker than regular Franks.

I also make my own hot sauces- I don't try for outrageous heat, preferring a good upfront zesty heat surrounded by flavor . Serranos, Ring of Fire, carrot, onion, vinegar, garlic, sugar, salt.

I just bought a bottle of Frank's Wing Sauce not too long ago at my Walmart Grocery store. Good stuff, says me.
 
Chipolte....... Only thing i use peppers for is chili. Serranos are OK.......but chipoltes have the best flavor for me.
 
I’m fond of Uff Da sauce from the pepper palace. Last time I ordered, I bought a dozen bottles to get the case discount. [emoji3]
 
Haha the poll at the top tells the tale, this is an extremely subjective subject. Personally I like tabasco, I like the flavor and level of heat. I feel no need to try the hot sauce de jour. I'm the same way with beer, I know what I like and I'll try new ones occasionally but more often than not am disappointed.

I’ve been in a Tapatio kick lately. My favorite is Himihead. It’s made in Burlington and I’m out, I need @Crazy Carl to pick me up a bottle from the gas station in Saxaphahaw next time he comes out to a lunch meet.
