Many of the groceries here have crappy selection. I've been using Cracker Barrel White Cheddar blocks for my omelets. They're decent, but I was hoping someone had a better idea.
 
Start saving the bits of cheese that get stuck to the inside of fast food wrappers. That stuff is magical.

Jokes aside, I use whatever the wife keeps in the fridge. When all else fails, I'll just use a slice of American and then cover the omelette in salsa.

I use a mix, hard white cheddar, provolone, parm, and cream cheese usually. Depends on what is in the house.
Do not use the canned parm powder, but real cheese.
Mozzarella also goes good, usually any mix of hard and soft cheeses.

Swiss is good, I’ll use Munster when I have some left over from burgers (Munster is the meltiest cheese). Craft singles are fine in a pinch, omelettes are more about technique than anything else.
 
I love smoked Gouda
 
The muenster or smoked gouda soumds like a good twist........toss a slab of tomato on a bun with a folded omelet......
 
Food Lion Extra Sharp Cheddar is my go to. It's really hard to find proper sharp cheddar in tbe US but theirs is fairly sharp and reasonably priced.

Always start with cream cheese. Then it depends on what you put in it...

Some of my favorites are gruyere, smoked Gouda, Bleu, and Muenster...
 
Both the Cabot's Vermont Seriously & Extra Sharp white cheddars are killer. Right on the edge of being crumbly. Good stuff.

If yer a pepperhead, habanero pepperjack works a treat as well.

Sargento sharp or pepper jack, depending on what I want that day.
