Personally I would stick to supersonic. Otherwise you've given up the primary advantages of using a rifle round. Higher velocities and improved terminal ballistics. .300BLK subs are essentially equivalent to .45acp in terms of energy and momentum. 200-220 grain bullets in the 1kfps range....
If you're going to go sun though the bullet above is probably the one.
If it were me and I was using .300 BLK for home defense it would be 110 grain Hornady VMax. I can attest personally to their rapid expansion and tissue destruction on deer without a through and through. I would expect them to likewise be quick fight stoppers at HD ranges.
Now if your plan for subs includes suppression and hearing concerns that changes the calculus a bit.
