One pound of 85/15 ground beef, 1.7 pounds of 93/7 ground beef, 1 cup diced green bell peppers, a quarter cup of diced white onion, season salt, and garlic powder, and on to brown. The Shelby seasoning mix will be added after I get the meat browned, thought I'd give it a try, just for curiousitys sake.
Who knows, might taste good on a hot dog.....
 
I buy dried chili peppers and grind them in a coffee grinder to add a little more zing and depth of flavor. Makes a generic chili kit taste like you really cared. 😁
 
Don't forget the shredded cheddar and a dollop of sour cream.
And, corn bread!
 
I plan of fixin' a pot of chili with beans tomorrow. I, too, use the Carroll Shelby seasoning but add to it. I put onion in with the meat as I'm browning it. I also use Rotel diced tomatoes with chilies and some tomato sauce. Throw in some pinto, kidney and, black beans and simmer. Garnish with some shredded cheese and sour cream. The wife doesn't care for spicy food so I make it pretty mild but, I'll add jalapenos to mine. A big ol' piece of cornbread and I'm set!

My gut cant take too much excitement, I added a few extra things to make it milder, and no Cayenne pepper for this guy.
From the taste of it so far, it's gonna rock on hotdogs......
 
I add the same stuff as @Geezer mentioned, and I also add thin cut strips of chuck for a thicker texture. For the ground beef I do lean ground chuck and ground turkey at a 50/50 ratio.
 
I've used Carroll Shelby's for years as a base. I made some the other night with deer burger, and some wild hog sausage from a buddy of mine. It was awesome. We served it over macaroni and cheese. It was a good twist.

Well, well, it appears that we are all making a "dry" run in preparation for Friday February 5. I can hardly wait.

 
We call chili a bowl of bliss. We made 4 gallons for the two of us this week, ~ one gallon was venison, pinto beans, lentils, black beans, NO kidney beans, onions, 10 fresh chocolate habaneros, jalapeños, garlic, maters, cumin, salt.

We’ve been a CS Chili household forever. Wife found a recipe hack and now makes it from scratch.
 
Gonna simmer these as long as I can stand it.

Carroll Shelby’s is pretty good. Another good one, if you can find it, is hard times chili.
 
I made a big pot yesterday. A few things I add to give more layers other than heat: cumin, some dark baker’s chocolate, and smoked salt. I also use both a beef roast and lamb roast cut up into 1/4 cubes that I brown it onions and mushrooms before I add them to beans,tomatoes, and peppers

Haven’t they trained you over there to make traditional Texas Red yet? If you get caught with those beans you’ll be shipped off to CA or NY. Be careful.

I've never owned any Vans. But, I have the cowboy shoes covered. I even broke out an old pair for a Christmas Eve shindig.

Today would normally be our annual chili cook-off at church along with the burning of the Christmas trees and singing carols around the fire while the judges judged the chili. I make my chili from scratch and have 5 (or 6) first place ribbons. One year I used Ghost Peppers instead of jalapenos and got disqualified <LOL>. It was too hot for them to even be able to judge it. Sadly, this year it won't happen. All this thread about chili makes me want to go in the kitchen and make a big cast iron kettle of chili. YUM
 
I make mine with my own spice mix most of the time. When I do use pre-package mix I like the Wick Fowler better than the Carrol Shelby.

My wife made a pot of chili yesterday, using a recipe of unknown origin that has been modified over the years. It was pretty good, even though it contained ground turkey, and the closest thing to sour cream in this house is yogurt. (This is what happens when you have a couple of semi-serious medical conditions and your wife takes it upon herself to force you into a healthier diet. Thank heavens I still control the cooking of bbq here. 😁)
