If there is such an excess why is the stuff so expensive. At work I pay $47 bucks for 15 pounds of it.

Then they need to drop the dang price of bacon. I mean crap it's 5 dollars for decent bacon these days and a small package.

essentially, the futures market set the price of pork bellies in the past. that future is now, and we get past prices.
in accounting, it's First In, First Out. also, hog production hit a high mark
anticipating the China market without tariffs.

Well I'd buy it, but between being 30 percent injected water and sky high I quit doing so.

Because of swine flu, producers take the product to market earlier, rather than have to destroy the at risk animals if they later contract the disease.

This is a normal pattern in commodity markets. A threat actually INCREASES the stores on the front end, as producers rush to get them into approved markets before things get scary. Corn blight did the same thing a few decades back.

I figured when the Chinese bought Smithfield's thier market would create a shortage here in the US, very interesting.

It's shameful that so many US companies have be sold to foreign interests.

Oven bacon is acceptable if said bacon is coated with brown sugar and a mix of dried pepper flakes/powders.

I've been making my own bacon this year. All you have to do is buy fresh pork belly, cure it for a week, and then throw it on the smoker for ~90 minutes.

After that, just slice it and freeze it. Take out a pound and fry it up when you're ready. It's super easy and super amazing gosh darn super fantastic delicious. Far, far better than anything you'll get in the store.

If you're intrigued, google it and then do it and then thank me later. :)

Most wild hogs are not nearly fat enough to have a fat enough belly for good bacon. I've came across a few in south Georgia who looked like they never left the peanut fields, but i'd say less than 5% of all of the wild hogs we've killed were fat at all.
