This aint no trash fish and it aint just bait!

Clean, butterfly, and salt - pack in ice for a few hours

sprinkle with Tony Chachere Creole Seasoning then Baste with this:mullet baste1.jpg
smoke @ 200 till 165F

Baste with Cajun Butter several times while smoking(See thumbnail pic)

Enjoy and better give the dog some skin:

Make some dip (with Capers) with leftovers: - WOW its good

I competed in an archery 3d shoot years ago down there in Florida and on the lunch menu was fried Mullet. I was leery about the dish because I always used them as bait until I tried it.. This fish is awesome, light and flakey and was quite a surprise.
