Cooking with wolfie

I was so tired this afternoon after spending 2hr mowing my yard, I almost wanted to order pizza. :)
But, I didn't.
Staying the course with the 95% eating good and exercising.

Made some chicken quesadilla yesterday after getting in a good 6mi hiking plus other walking around for the day, 10mi total.
Chicken is from some breast that I canned back in 2013.

This afternoon, got all the yard mowed, got somewhat overheated and put the water hose to my head & neck to cool off.
Again, didn't really feel like cooking, but knew I wanted a 'mater, corn & some kind of other veggies.
Wasn't too sure on a protein, but decided to thaw a small ribeye to go with it all.

Squash/zucchini/baby bella mushrooms, half an ear corn, sliced German Johnson 'mater, and of course the ribeye.
And, yea, I ate all the ribeye.
Figured since I didn't have anything since my venison/bass farms sausage this morning, I could afford it...

But, first, after yard mowing, water on the head/neck and my clothes soaked, I decided to have something refreshing.
Highland Brewing Co Pilsner & some Smart Water. :D

I'd eat that! But where's the beets and Brussel sprouts and broccoli? Nice beer glass, BTW.
 
Wasn't craving Brussel Sprouts this weekend.
They come & go and right now, I don't want any. :)

Hmmm...
I may have to just pick some up this week for the upcoming weekend, give grilling another try.
I swear, I think they were palatable when grilled. :)

I have yet to find any way of preparing them that they don't taste like nasty dirt. I've never prepared them myself and I'm not inclined to try.

Have you tried peeling them & roasting in oven or grilling?

That's about the only way I can eat them...

Looks wonderful, I've never made a peach/blueberry mix cobbler before. It's been added to the "to do" list.
 
I can't wait for someone to invent the transporter booth!

Then you could send some our way fresh outta the oven...

It's been last year since I've fixed them that way, but I think it took the dirt taste away.
I might get 1-2 for the weekend and see what way works best for reducing the dirt taste.

Cobbler recipe is from 2007 Cooking Light magazine.

Filling:
.5c granulated sugar
2tbsp all purpose flour
.5tsp grated lemon rind
.25tsp salt
3c peeled chopped peaches (about 2 #)
2c fresh blueberries
1tbsp fresh lemon juice
Cooking spray

Topping:
1 1/3c all purpose flower (about 6oz)
1/3c granulated sugar
1/2tsp baking powder
1/4tsp salt
3tbsp chilled butter, cut into small pieces
2/3c low-fat butter milk (I use "regular" buttermilk)
1.5tbsp turbinado sugar.

Preheat oven to 400F
Filling - combine 1st 4 ingredients in large bowel. Add peaches, blueberries, and juice.
Put into dish(s) coated with cooking spray.
Bake at 400F for 15min

Topping - combine flour, granulated sugar, baking powder, and salt, stirring with a whisk.
Cut butter into pastry w pastry blender or 2 knives, until mix resembles coarse meal.
Add buttermilk; stir till just moistened.

Remove dish from oven, drop dough onto peach mixture, 8 rounds (or however much you want)
Sprinkle dough with turbinado sugar and bake at 400F for 25-30min.

The one(s) I made this evening - pretty much doubled the recipe...
I forgot to get a lemon today, so I didn't have the lemon zest or juice.
I also used self rising flour for the topping, therefore omitting the baking powder.

I think that's all....

Been gone almost two weeks straight, with one day in between them. Decided to make some homemade pizza to celebrate being home. Margherita (tomato sauce, real mozzarella, and fresh basil) was the choice. Simple but delicious. Fresh grated parmesan to finish it off. Perfection.

Haven't taken the time to upload to flickr till now...

Photos from the 4th grilling & such and this evenings cooking with a little grilling.

First off, I peeled a peach, added it to a pint jar.
Added a cup of heavy cream, 1.5tbsp sugar, 0.5tsp vanilla, put a lid on and shook for 4-5min.
Peach ice cream ready to go into the freezer. :)

I also pitted some fresh cherries and made cherry.
Was gonna be cherry & dark chocolate, but I forgot the chocolate till I was shaking it up.
Added a couple chopped pieces of Hershey's Dark Kisses.
It all settled to the bottom but that's OK, I'll just add more fresh cherries & Hershey's Chocolate syrup when I have some. :)

The rest of the 4th:
4 burgers, my home grown jalapeños stuffed with cream cheese & wrapped in bacon, half of a very large chicken breast cut in half, halved zucchini, and a pork loin chop.
And, in the back are some quartered baby red taters & baby bella mushrooms for the oven.
All for the grill.

I also had some fresh corn cut off the cob, cooked a little and then added a jar of my home canned green beans to that...no picture though.

And, a hotdog for the doggies. :)

I put the jalapeños in the oven with the taters or about 10-15min then took out and put on grill.

And, just so's y'all don't think I'm a pig, I was only able to eat the burger and one of the jalapeños.
Ate the tater with ketchup on it and the rest put away for meals last week.

I won't buy from the store again I don't think....

I did have to "thaw" the peach out a bit this afternoon after I finished mowing.
Took about 3-5min in the temps here to thaw enough such that I could eat it from the jar with a spoon....with a little elbow grease to get it out before thawed a bit more. :)

It's really good, but I did have to set it outside around 1pm after mowing, to thaw enough such that I could start getting some out.
I think putting in the fridge for a bit would've been better, but I forgot and I WANTED some peach ice cream. :)
 
What other flavors have you done? Any flavors that you suggest to avoid?
 
I sure do wish there was a "Like Whole Thread" button so I could hit it. I haven't looked at this thread until now. So many awesome and delicious recipes and dishes being posted. I'm getting hungry as I'm typing this.:D

Google Chicken riggies. You are close, but not quite there. But I'd eat about 2'lbs of yours too! :D

When I go up North behind enemy lines it is my staple at Italian joints. Easy to cook and hard to screw up. I usually have to add a lot more red peoper than most people like, but I am a little odd. And I like the hot cherry peppers, but most people are fine with the standard variety. Add some wine and it is a good meal.
 
Didn't feel great after being outside all morning till around 12:30-1pm...

So, I had a few jalapeños and baby bella mushrooms - figured I'd stuff them with some sausage/cream cheese/colby-jack...

I will bake all for about 15min at 400F, then put the jalapeños on the grill.
Also took a half of chicken breast out about an hour ago to thaw - will put it on the grill too...
But probably won't start the grill till about 7:30-8pm - maybe it will be a little less hot by then.

So, here ya go for now....

I used to stuff jalapeños with sausage, cream cheese and a jar of salad olives. Browned the sausage and tossed everything in the blender until it was all pureed, then stuffed the peppers.
