"Food Coma Day" whatcha' cooking?

    As usual, our day will be Saturday due to the kids' other familial responsibilities.

    This will be a bare-bones year. Only 4 of us.

    "Ranch" crackers and sausage ball starters. There will be also wine, whiskey and other intoxicants.
    Roasted bird, cornbread/clam dressing, seasoned collards, gravy, cranberry sauce (fresh secret recipe), homemade parker house rolls.
    Chess pie.
    fruit plate & nut plate for grazing.

    This is the first in many years that I will not be going big. It feels so wrong but, at my age, I'll take it.

    I wrestled with the Brussels but, I decided to incorporate them into Christmas dinner somehow (appetizer). Don't get me wrong, the whole family loves them but, they have been predominent on the menu several times in the recent past so, giving them a rest for this adventure.

    My portion is a smoked ham, sausage stuffing (french bread not cornbread), brussel sprouts w/ bacon and onion and a pecan pie.

    Friends that are family and I tend to cook half of the Thanksgiving. Then I do a full one just for us the week after.

    Got two butts in the smoker now to go all night. In the morning I’ll wrap them and put em In a cooler, then stick a turkey in their place in the smoker

    We tonight we have family driving in at all different arrival times so I made a Baked Ziti and a bread which can be consumed upon arrival.

    Stuffing outside the bird.

    With only the three of us this year, we are breaking from tradition and doing carnitas. It’s a recipe @bigfelipe shared with us. And there is pecan pie for dessert. Keeping it simple and delicious.

    I try every year to convince all the household females we should cook something different for Thanksgiving and I am outnumbered every time. SomI am getting this year and trying a different recipe/approach to the turkey. I’ll post some boring turkey pics as I get it going.

    2 oil-less fried turkeys, deer roast, fried tenderloin, Tuscan kale, cauliflower bacon dish, crescent rolls, home grown green beans and corn. Part of this goes to the wife's family for dinner. Just me the wife, 2 of the kids and a cousin and his wife for lunch. I like the smaller get togethers.

    Daughter has to work at Shoneys, so we will pick up son in law and eat buffet.
    Saturday, don't know yet. Already made cookies, more cookes, herb bread, and more cookies. Travel tomorrow and see what my dad wants me to do, no idea til I get there.

    Fried one whole turkey, ~12lb and one breast, ~6lb.

    Sweet potato casserole, French style green beans with some kind of tomato topping, rice, mac & cheese, cream corn, fried okra, dressing, cranberry sauce, gravy, and bread. Then some lemon pie, apple pie, and brownie trifle for dessert. That should be enough for the four of us. :D

    This actually turned out to be a lie, I ended up making some chicken stew because I didn't feel like another sandwich dinner. Pretty good, I used up some thighs I'd cooked before they went off and then froze them. Stupidly tender, plenty of veggies.

    I let my wife handle all of the sides and desserts. I brined and spatchcocked the turkey and smoked it low and slow on an offset firebox smoker. It only took three hours and it turned out full of smoky flavor and as juicy as can be.
