Food triggers for inflammation

One thing I have been doing on these long China trips, of late, is trying to identify the foods that trigger inflammation, and thus the eczema flare up in my hand and foot.
Being away from nearly all of the foods I eat at home makes it easier to do that.
Discoveries this trip so far?
No more peanuts. Peanuts is actually on the list of possible triggers. It could also mean the legumes in general are triggers for me. That means no more delicious black bean chili.
Another trigger was KFC chicken. Something in it leave my hand feeling swollen in the morning and the eczema starts to flare by the afternoon.
Unknowns? Cheese. I haven't had any cheese here. But one of my favorite snack at home is palmetto cheese spread.
So far, rice is not trigger. But there are signs that wheat is and possibly other grains.But I have had some wheat based pasta here without incident.
I haven't put anything on my hand in several weeks and it is nearly clear. I can see the very fine scar on my hand from the fillet knife slice that scored me over 20 stitches. The doc was a surgical resident and used small closely spaced stitches. So the scar it not that obvious. I have rarely even seen the scar since around 2006 when the eczema first showed up.

I'm pretty sure the proteins that cause inflammation in peanuts are readily denatured when made into peanut oil.

What the Health is pure fiction composed of bad data created by a liberal Hollywood celebrity with a strong "progressive" agenda.
 
Have a look at some yin yang food charts. They list foods in varying degrees of hot/cold, hot being irritants.
My vet turned us on to it for feeding my GSD with skin allergies. I now prepare his food using "cold" ingredients and it has made a significant difference in his health.
 
White rice is supposed to be the food least likely to cause any kind of allergic reaction. Not saying it's nutritious, but one can live on it for a few days, then start adding in foods and real proteins to find trigger foods.

No, that seems to be overly broad and contradictory on some things (not all fish and poultry is hot) compared to what I have been using but my source is from traditional Chinese vet med so ymmv..

Nothing legible online so a crappy sideways potato phone pic will hopefully work well enough for show and tell. I generally feed out of the cold and neutral categories from this chart.

I have no allergies. Lucky me!! Some of these diagnosed allergies are bonkers.

I only have mental allergies, I HATE eggs, eggplant, fish, squash, ToFu, just to name a few. Would it kill/incapacitate me to eat them, no, as long as I was starving and couldn't even move on my own.... and kept my eyes closed and swallowed quickly....
 
It becomes more of a mystery each day. Trying to figure out what is triggering is not so easy.
Peanuts do not always trigger inflammation. So it could be something added to specific packaging/brands.
Eggs don't always trigger either.
But something I eat at home but not in China is more of a trigger because the eczema is better away from home.

Is it something you eat, or could it be a particular mold or even the moisturizer that your wife uses?

Might be interesting to bring your diet home, shouldn’t be too hard to replicate enough of it to get by for a couple weeks.

Can't duplicate what I get at the canteen for lunch in China. But one thing I do eat daily, in China that I do not eat at home is rice. Not a lot. Less than 1 cup.
I eat fatty pork too. I eat that at home too.
Maybe some of the greens I eat here are natural anti-inflammatory.
Celery juice is supposed to be a strong natural anti-inflammatory. I like Celery with home made salmon dip.
