Me and Dad spent the day fishing the Shallotte River. Bait was hard to come by this morning but we eventually got a dozen or so minnows and got to work.

I caught the 22” and Dad caught the 16”. We got home and cleaned them around 3, Mom had them in the frying pan by 5.

I enjoy all types of food but I tell ya, it’s hard to beat fresh caught founder.

They are an ugly fish, but taste great. Very nice.
 
Nice fish. Picture 3 is beautiful. I love some flounder.
 
Seriously, it looks about perfectly breaded. Not all overdone like most. A little tartar sauce and a goood beer and it is all good.
Mom is a pro when it comes to frying fish, she grew up with her mom and grandma teaching her. I’m hoping my wife will pick it up in time, not that she’s a bad cook by any measure, but don’t nobody make fried fish and cole slaw like mama.

How do you clean a flounder? Do you filet it like any other fish or is there some trick.

I cut them along the spine and then work from the spine out to the outter edges. Do that on each side and you end up with 4 pieces per fish.

If I think about it next time we catch some I’ll post a thread on cleaning one in the animal processing sub forum.
