Good fried fish for cheap

There in Walmart I found catfish chunks , 2 lb bag for $3.50 and since I'm always looking for cheap eats gave this a try.
Thawed the chunks, then tossed them in a bag with milk, some lemon, garlic and onion powders and a bit of hot sauce and let sit for about an hour. Fried them in canola using this breading mix and they came out great. My Wife and I are not a big fish eaters but even she liked them, No fishy taste and just a bit of spice.fish fry.jpgfish fry 1.jpg
 
When we fry catfish (my wife loves fried catfish) I use Dijon mustard to dredge the fillets or nuggets in before the breading. Read about it somewhere, and we love it. Not much perceptible mustard taste, but it makes the breading stick very well.
It's a great way to make pork chops too.

To the op, those look great. I'm not a big fish eater either, but I like how those look, I bet they'd be good made up as some little sliders on kings hawain rolls?
 
Panko crumbs are where it's at. I'm convinced you could fry an old tennis shoe with added panko crumbs to your batter and they would be fabulous. We usually roll the fish in an egg wash, then dry batter, then back in an egg wash then in panko crumbs before dropping them in the fryer.
 
Well thanks a lot. Now I want some catfish. And not the store bought kind although that is all I can get now. I have a buddy who used to manage a catfish farm and when they would harvest a pond he would get a cooler full and fillet them and cook them up in his shop and have a bunch of us over to eat.

As good as what you got these were better by far. As you said no fishy smell. You could go to someone else's house and cook them in their kitchen and they would have no idea fish was on the menu.

I feel like the difference in these and wild caught catfish is these are fed food that floats so they are not feeding off the bottom but I could be wrong. At any rate it is some good eating.
