I loved the stuff you gave me. Jenny and the girls not so much, it wasn't Neese's therefore it isn't good. :eek: Whatever. Those girls wouldn't know good if it slapped them on the ass with a pound of wet sausage.

I don’t make big batches like that. Normally 20-25 pounds. Sweet Italian, chorizo and made chicken with feta and spinach before. I liked that. Wife not so much.
 
LeeMajors,, your choice of the part of pig to make your sausage from is spot on..As you know the correct meat to fat ratio is so important and you know what you are doing..

What choice. lol. It was the WHOLE pig plus 8 shoulders. I've been making or helping make sausage for 40 years. It's so much better than anything that can be bought. Not only mine but anything made at home.
