Most likely the wood burning version. This one is propane fueled so it will heat up fast and run more consistent.
 
How much?

Probably easier, but I think a nice brick wood burner would be more authentic and give you better results and flavors. Just get your mason game on.

There’s a huge horse show in Ohio every year called the Quarter Horse Congress. It’s at the big fairgrounds in Ohio. There’s usually a guy there with a wood fired oven making pizzas . He sells them for like $11-15 I think and puts one out every 60 seconds. And he starts cooking at 9am and cooks til about 11pm every night. Tell me this guy isn’t rolling in the money

I bet you can spot him anywheres by the lack of hair on his forearms. That shit is hot beyond belief. One guy I talked who was running a large wood fired commercial oven said at any point in time he is only 2-3 minutes from disaster. ( Pizzas are done in 4 minutes or less.)

$299. shipped. I personally would see this as an intermediate step to a large format wood fired oven. One of the biggest advantages of this setup is portability. It would be amazing for tailgating, cookouts and even car camping. As far as the wood imparting flavor if the temps are where they should be which is about 800-900 degrees pies are not in there long enough for the wood to impart any flavor. There is a old school factor to wood but I am not sure it really adds any flavor.

Also I am not looking to go Homer Simpson on a pizza oven.

I use my Kamado Joe and get it rolling to 650ish. Takes less than 4 minutes. I have to wear leather gloves and "burp" it by holding the lid about an inch or so open. They're awesome pizzas.
