Been trolling around in different forums - and I must say that there seem to be far more open conversations and good collaboration here than the others. Best part is that there does not seem to be much of the red maple leaf flavor!

Keep up the good work folks - this is an excellent forum!

If it weren't in the state constitution that all adults be armed they would have banned guns long ago. But they still try.
But hey, the syrup is still good. Though they have been trying to ban tapping trees.
 
Don't forget Michigan...there's a couple of good syrups come out of there, too lol

I used to make maple syrup in Michigan. We'd put out several hundred gallons a year.

At thirty gallons of sap to one gallon of syrup, that was a lot of five gallon buckets we hauled through the woods in the snow.

But ahhh, the sweet smell of the sap boiling when you stepped into the sugar house...

I actually like Michigan syrup over Vermont...seems like its a little lighter, not as heavy, but still as sweet. I never realized it took that much sap.
I bet the sugar houd DID smell good :)

The area of NE OH I grew up in is renown for their syrup. They actually have an annual festival celebrating it that dates back to the 1800's. Unfortunately today it's more of a carnival than anything. That and the weather patterns have been changing such that it gets warm early and causes leaf budding and that makes the sap bitter. As with most agricultural endeavors the weather can kill a harvest.

I went into a sugar house many years ago. It was called Paulines in Bowling Green, Kentucky down on Clay Street by the tobacco barns.
