I have a NHM91 reverted back to RPK style and I love it. Very accurate and as reliable as you'd expect an AK to be.

More parts kits obviously.
Last I looked Atlantic still had some fixed stock egyptian kits in if you're looking for something off the beaten path a bit.
 
Oh I’m out now. I’ll pass on the Egyptian stuff. I’m a pretty gun guy and for what you get IMHO the Egyptian stuff is about 10x overpriced. I know supply and demand, The North Korean stuff though Man , thats some ugly parts. I cant do ugly.

The Izzy and Tula kits coming out of Italy the last year or so have been super nice and something you haven't been able to run across in the US at all as a common kit in the years available. Everything from first year to last has been showing up in the kits. As far as pretty it's hard to beat a Tula kit with dark wood.
The days of the cheap ak kit builds are long gone at this point, even amd-65 and rommy g's are $700+ now, so now it's more of either I want XXXXX because I've always thought they look nice, or I want to build up something a little harder than an AR.

If you're looking for something to build that's not an AK, a vz.61 is a straight forward build for a home builder, parts kits are still easy to find on them and receivers aren't to hard to find. That's about the only subgun I can think of that you wouldn't need to be welding or machining at some point.
