Who is celebrating this annual occasion with some poultry appendages? Smoking wings here today with applewood pellets. Pics to come.

Damn, I am prepping a Tri tip roast for tonight. There's still time for wings, but the women folk may not let me gontjere at this point. There is corn and taters planned as well. :(
 
Brined these few thighs and some wings in salt and Dale’s. A little Pig Pen’s on them and onto the smoke!

UPDATE! 90 min in and looking good!! Color usually comes in last 30 min. Might need to turn temp up a bit too.

Dang, I had wings for lunch and didn't even know it was National Wing Day.
 
Thanks for reminding me. Wings are brining. Blue cheese dip made.

I will be frying and tossing in my wing sauce buffalo style.

Very nice. Mine are on the Big Green Egg right now. Creating a custom wing sauce for most of them so I can sweat a little bit. I used butter, Frank's Red Hot, Peri Peri Pepper sauce and a tiny bit of Stubb's Sweet Heat B'cue sauce to thinken it up a little. Kids want sweet barbecue and the wife wants some sweet and spicy so it's 3 different sauces tonight.

Almost done just a little browning to go. Cooked elevated over about 225 degree coals for about an hour. Then cranked the heat up to brown and finish off.

If you have a Trader Joe's nearby, they have a garlic sriracha bbq sauce that makes a great wing sauce straight out of the bottle. It's sweet and tangy with a bite on the back end that will make your nose run a bit.

I usually create my own. I have a fairly huge stash of sauces, spices and garlic around and make sauces for whatever I fel like that day. Garlic and chipotle is one of my staples.

The 3 thighs were the best though. Next time it’ll be all thighs.

Let everyone spin their own. Sauces on the end are Carolina Reaper and Ghost Pepper respectively. HOT!
