New to me Snapper won't keep a belt on.

I bought a used Snapper mower near the end of the season last year. My wife decided to cut grass the next day and it wouldn't keep the belt on it. The previous owner said he didn't have any trouble with it.

After watching the mower in action, I noticed that the belt would jump right off when you disengaged the blades. So, I began researching.

It looked like this mower was missing a belt guide, according to the internet. I ordered one, but looking up under the mower, I don't see anywhere to mount it properly. I also had a new belt. I left the mower under a tarp and finished out the season with my old Murray.

This season, I decided to put the new belt on and try it. That seemed to be all it needed. But, just before my wife finished, she disengaged the blades to cross the driveway and the belt jumped off. I started looking closer and thought that because the angle between the PTO and deck pulleys was so sharp, that perhaps we need to lift the deck before disengaging the blades.

Sooo, I'm cutting grass today, trying my method. Things seem to be working until I'm about 2/3 done. I'm mowing in a straight line, deck on 2, blades spinning, when the belt snaps and shoots out into the yard. It left a piece under the idler pulley.

What the 'H' is going on with this thing? Am I missing something?

Check all the pulleys to make sure they are not loose or misaligned. There should be a stop near a couple of the pulleys that helps keep the belt from jumping off. I can't tell from the picture. Get a manual for it and check the parts breakdown to see if you can find something missing.
 
Check the idler pulley bearings for wobble or bearing noise, and the blade spindles.
Replace with factory belt or gates bladerunner direct replacement.
I see 2 belt guides in the picture, and it looks like the parts breakdown only shows 2 guides. Check alignment, they can wear into the belt if the angles are off.
 
Time to get out the straight edge and have a nice long slow look at everything.
 
Check the pulleys for wobbling, might be wear we cant see in the pic.

In addition to the above checks, clean the pulleys before trying another belt, two of them look oxidized from sitting last season.

I have that piece, but it's only long enough to attach to the clutch assembly. I've tried doing that, but I can't torque the nut or it locks down the assembly. I'm not seeing another way to mount it so that it covers the belt.

I'm starting to get the feeling I'm screwed, but I'm going to dig further.

Like mentioned above check to make sure non of pulleys have a bearing out all should spin easily by hand. Also verify all are aligned and tensioner has stretched. Also are you sure your routing it correctly some can be a bit tricky the way the route around pulleys.
