New Years Eve Dinner in the Oven

We are having Primed Rib with mashed potatoes, popovers and green beans. Will have a nice Napa Cabernet and then some Veuve Clicquot to ring in the new year. What are other people eating while welcoming in the New Year.

One of my boys is home for a week, so I’m eating Swiss chocolate he brought back from Switzerland on the trip with his Swiss girlfriend, and then fat ribeyes are mandated on the grill in a few hours to put some meat on his bones.
 
Tonight is beef enchiladas, black beans, chips and hatch chili queso.

Big dinner tomorrow. Stuffed roast pork loin, sauteed spinach, Hoppin' John, cornbread and 'Nana puddin'.

Tomorrow is Hoppin John, collards, corn bread and maybe Mac and Cheese.

My family is making albondigas (a Mexican meatball dish) and grilled ribeye kalbi (Korean bbq).

No, I haven’t tried making my own kimchi. I’ve seen some YouTube videos on how to prepare it. It doesn’t seem too difficult. Wife doesn’t want me eating that when she’s home. She doesn’t know what she’s missing. It smells bad, but tastes really good. And not to mention it’s really great for gut health.

Veuve Clicquot Ponsardin is a French Champagne house based in Reims. I went to their Champagne house in 2018.

That's purdy! Do you mind putting together your directions for cooking the reverse sear method? I've only used the get the oven to 500 then let it cool method, but our old stove bit the dust and this one cools down quick with a fan.
 
Tonight it was grilled pork loin, loaded baked potatoes, and grilled asparagus tossed in a little olive oil, garlic powder, salt, pepper, and grated parmesan.
Dessert was Old Fashioneds with a nice bourbon.
Tomorrow is going to be bacon wrapped filet mignons. Probably do steakhouse mac n cheese with them plus something as yet undetermined.
