Pastrami

Yep, love a good pastrami sandwich! One of the best ones I’ve had came from Primanti Brothers in Pittsburg PA. The original restaurant made their name by providing truckers with a good meal that they could grab and go. So their sandwiches would have their choice of meat, cheese, slaw, and french fries. If you have never been and get up in the PA or WV areas it’s worth the stop.

No recipe recommendations, but IMO, err on the "too long" side for your brine times.
 
So I love a good pastrami sandwich. Bought a brisket flat tonight so finally going to make my own. Plan on using Meathead Goldberg’s recipe from Amazing Ribs. Anyone ever done one, and have any recommendations?

I dig Primantis. Been several times.

I love pastrami.
 
I usually enjoy Englehoffer’s mustard, but am enjoying this one now. No Gulden’s.

I also love specialty mustards, but haven't had any in a long time. Only a couple or three of us who like mustard, so my wife rarely buys it, and when she does, it's usually a standard yellow, honey, or spicy.

Have any of those bottles been opened?
If they were in my house most of them would be 1/2 or less filled the first week (or day) they showed up.
A few have, most not. I’ve got acid reflux so bad that I can’t drink very much anymore, but I still collect.
 
Ive eaten a lot of pastrami over the years (all you have to do is look at me) and once youve had good pastrami out of a steamer in NYC, you cant eat it anywhere else. I bought some at Wegmans last week and it wasnt fit to eat. I knew better. Good luck with yours.
