Anyone in the Mooresville-ish area know or can help out w an undermount sink installation in a bathroom?

You can tackle it yourself, install the new (or existing) faucet while the sink is on the kitchen table (use carton to protect table).
Much easier then trying to do it later on. Many youtube videos.

Safety glasses, gloves, small hammer and bucket underneath for the pieces. Work slowly.
Then remove the pieces left that are glued to the underside of the countertop.

Get a short 2x4" and drill one hole in center, get two nuts, flat washers and some threaded rod,
this will support the new sink when you use adhesive to put it in place until it sets up.
 
Looks similiar to a kohler 2210
I think the size is close to 14x17

General to take one of you need some 1/4 shims and generally work them in evenly from inside out tap them with a hammer evenly should have off in 10 minutes or less.

Saw this on YouTube. Until I watched the video I thought it was clamps or screws underneath of something.

I have used an oscillating tool to cut the bowl off. cutting along the granite and scrape it off with the tool
do your best to remove all ( and I mean all) the silicone from the granite (assuming it was affixed with silicone to begin with) with steel wool and clean with alcohol
silicone on a new bowl using 2x supports or a bottlejack to support it for 24hrs
plumb it all up....

Look underneath, there will likely be 4 clamps that hold the bowl to the granite. This is important because you want to take them off before you start beating on the sink, and because it defines the size of the sink that you want to install. I have one with a crack that’s not as bad, it’s on the honey do.
 
how about using the piano wire trick the glass guys use to cut out a broken windshield?
 
You have good advice upstream. I have done a few of these.

I would opt for removing the countertop (of course), flipping it over, cutting the bowl off, and putting the new one on. You can put it on with silicone only (bad plan, imo) or do it the way I do (which I have never seen recommended). Get a diamond drill bit (3/8??) and drill a SHALLOW hole (don't go thru the countertop), then cement some dowels in them. Then use clamps that screw into the dowel plugs (which you pre cut to be flush). Overkill? Maybe. Better than seeing the bowl come down when your kid is brushing her teeth. Probably won't happen, but.....

Be prepared to adjust your feed and drain lines, as they might not line up. If I were close to you, I would be happy to help you out. I worked as a plumber when I was out of college and just killing time before grad school. This stuff is not that hard, and YouTube makes any job doable.
 
Check out Habitat ReStore but replacing the sink is the least expensive way.

Get one of the hacksaw blade holders, Stanley called them the Mini-Hack
or use a vise grip to hold the blade, use coarse blade and slice the silicone.

I suppose I should share one last piece of info, that I should have included from the word go.

This is not my house, it’s a rental. My landlord will likely try and jam this cost in my ass and I was hoping to fix it myself or defray as much as possible.

I was hoping to get an idea now about what I can expect to eat in labor costs, I know I could call around and I will, but I just hoped for some insight.
