I know I take AR-15 lower from an SBR to a regular rifle by installing a 16" or longer upper, but can you go back to a pistol from an SBR?

Pistol is always a pistol if purchased that way, if it is an SBR, you can swap uppers. If you are making it a permanent change, then a form is sent in to reflect that.
Edit: Pistol can return to being a pistol while a rifle can not.

Pistol is not always a pistol.

If I bought an AR pistol with a <16” barrel, I have a pistol. If I swap to a 16” barrel, I still have a pistol. If I remove the brace, and install a stock, I have a rifle. I can reverse that and end up with a pistol again as long as I don’t end up with an illegal SBR by swapping the barrel/upper before removing the stock.

Pistol->rifle->pistol is fine.
Pistol->SBR->pistol is fine based on the only time I’ve seen the ATF answer it in writing.

It just can’t have started as a rifle, since rifle/SBR->pistol is not fine.

I should have waited for you to answer,
I was thinking of my G22 pistol that's SBR so I can run it in the Micro Roni stock.
