Wife wanted the squirrels out of the freezer (and refuses to eat it regardless of how I prepare it) so I made some ground meat jerky out of it. Commercial cure and hickory seasoning; just some cracked pepper added when it first went into the dehydrator. Tasty stuff!

Took 8 tree rats to get 1 pound of kwality double ground meat.

I've always wanted to try squirrel. I was going to pot a few now I'm out here in the boonies, but we don't seem to have any here
 
Had a few pieces with lunch today. I'm still alive, and it was quite tasty.

Worth doing again.
 
I saw this thread and it reminded me of a cookbook my daughter in law bought for my son.

look how cute that little guy is sitting in the pot. but I don't think that's how you cook them.


now that reminds me, there is still jerky in the fridge. I'm off to enjoy some.
 
Cool, new one on me. I have turned a lot of critters into jerky, but never even considered squirrel. Good thinking there. Looks good!
