Well it's actually been a taco week, but this was last night's entry...

Chorizo Tacos with Chips and fresh Pico and Avocado/Serrano Cream

1st grilled up some fresh chorizo in natural casings...

For those in the know, this is liquid gold right here...

Chorizo oil... Want to make the best eggs you've ever had? Fry them up in this stuff. Bored with your pan roasted chicken? Start with a tablespoon of this in the pan. Great for sauteed asparagus, mushrooms, or just about anything you can imagine...

Tonight I got it twisted...

I give you Pork Belly Tacos with a fresh pickled Napa Cabbage Kimchee, Avocado, and Devil's Tongue Pepper Pan Sauce...

The topping is shredded Napa cabbage, cilantro, and red onion tossed in a mixture of pickling salt, garlic, red pepper flake, olive oil, tupelo honey, raw apple cider vinegar, and a dash of fish sauce.

My 5hr beer/tea braised pork belly tossed in a sauce of toasted sesame oil, chorizo oil, devil's tongue hot sauce, and finished under the broiler...

My brother's homemade Devil's Tongue Pepper Sauce from his garden. A little goes a LONG way...

Yes! I might be able to host in W. Jeff depending on the date. Plenty of space for camping, a few bathrooms and some air mattress pace in the house. Plus lots of wood for a camp fire. Who wants in?

That sausage looks homeground....did you do it and if so do you share recipes? I luv chorizo and have to go to Hispanic grocery to find good ones.

Sadly, no. I haven't made sausage in awhile, but I used to quite often. That's from International Foods in Raleigh. They do make it in house though. I shop there for a lot of my meat. Cheap pork belly and awesome sausage options. Toro Supermarket is also very good in that regard.

We could have a CFF truck that traveled the Carolinas with local members cooking their favorite dish or two. Take the proceeds to help fund the site. :)
