Bought this last week. Haven't used it yet, but it's a big ass bottle (29 oz) and I remember seeing or reading about the guy's competition cooking. Going to have to do a brisket soon.

Todd's Dirt is a great seasoning for veggies and poultry. He has other varieties as well that are all good. Met him years ago and have been using his stuff since (when not making my own).

Colman's English Mustard powder.

Comes in a little yellow can and a level teaspoon or more in whatever you rub on/wet cook beef and pork in will work wonders.

Since I started working in the beef shop, I have realised people here don't know about the powers of Colman's English Mustard.
What butcher shop? And you are correct---Colemans is some good shit. Really goes well with venison.

Any red meat, or close to red meat. Or some fish.

Oh not a real butchers, Lowe's Foods meat Dept but we have to call it the beef shoppe.

Nothing fancy.
Just vinegar, hot peppers, and sea salt.
No fillers, extenders, stabilizers, or softeners.
Sending a bottle of Fear the Reaper to my niece's husband for those in his unit. He's a First Shirt.

It is very hard to make a good hot sauce. It is even harder to sell or market it. Good luck. If it is as good as your home grown peppers you’ll hurt people. I like hot stuff, but not at your level of expertise!
