I had 18 lbs of summer sausage made from the buck I shot in November.

First taste was today since I had time to actually sit down and slice some up. Sausage, sharp cheddar, and Chikn-n-biscuit crackers.....holy cow. Wow!

I think I’ll try to smoke some to see how that works next.

That looks amazing.

Smoking it will be great. Smoking also makes great deer jerky.

Would you mind sharing your recipe, I have about 10 pounds of deer burger lady from last years kill that I would like to use.
I actually didn’t make this round. This deer was from Michigan so I had to have it processed before taking it across state lines.
But, if you’re feeling adventurous, Bernthal’s Meat Packing in Frankenmuth, MI is who did it.
 
I miss eating venison. My grandfather used to make various dishes over the years after hunting expeditions & I always loved them (along with his Quail!)

Never had sausage. What do they add for fat content?

Most places add beef fat when they grind burger, and pork fat when they make sausage.
