That looks amazing.I had 18 lbs of summer sausage made from the buck I shot in November.
First taste was today since I had time to actually sit down and slice some up. Sausage, sharp cheddar, and Chikn-n-biscuit crackers.....holy cow. Wow!

I actually didn’t make this round. This deer was from Michigan so I had to have it processed before taking it across state lines.Would you mind sharing your recipe, I have about 10 pounds of deer burger lady from last years kill that I would like to use.
I miss eating venison. My grandfather used to make various dishes over the years after hunting expeditions & I always loved them (along with his Quail!)
Never had sausage. What do they add for fat content?
