Fired up my Weber big kettle and smoked some chicked and also several cuts of from some Deer Hams.
Use a Rub I make and let it set 4 hrs before and wrap when done to hold in juice.
Got to say this is one of the better smokes.
I slow smoke over charcoal and add maple chips then finish on oak.
Use charcoal racks so it is indirect, slow cook, smoking at 200 to 250 for 4 to 5 hrs.
