What's for Breakfast?

Ate good this morning. Backstrap, eggs, and hashbrowns. It's crazy to think that just a few days ago this deer was in my scope.

Did up some sweet potato hash browns...tossed them with some pepper jack cheese, a egg for some binder,then tossed them into the waffle iron.
And a dippy egg and bacon. Cause that makes everything better.

They look burnt, but just nice and crisp

Yesterday was sausage gravy biscuits with an egg over easy on top from Spring Valley Restaurant in Greensboro, today was coffee and cigarettes, caffeine and nicotine.

Also, my wife likes grits and I've never cared for them. My wife found a bag of stone ground yellow grits last week and bought them. She says these were the kind her family got from a local miller when she was a kid. She made some this morning and we had them with the bacon and eggs. I can eat these, they have a much better taste and texture than the grits from the stores around here.
 
My wife, among other things, is an amazing baker and cook. Today she made homemade cinnamon rolls and I promise they are super delicious. Not a healthy breakfast by any means but man was it a tasty one.

I'm having trouble understanding why there are some left.
 
Diced potato with diced peppers added in, bacon, and 2 eggs over easy. That's my standard breakfast these days. I've been working on a quick breakfast I can do while I'm getting ready for work. I've got it down to 15 minutes.

Pre-cooking prep work, I take a 2 lb pack of thick cut bacon, slice it in half, and then lay it out on wax paper in cookie sheets and put it in the freezer to freeze, once its frozen I bag it up with the wax paper separating the pieces.

Start with some frozen diced potatoes from Ingles, a frozen diced pepper mix, cover the bottom of my air fryer with potatoes and peppers, put 4-5 pieces of the frozen bacon (2 - 2 1/2 whole slices) on top of the potatoes and set the air fryer for 15 minutes at 400 degrees. I grab a quick shower, at the 13-14 minute mark start up the eggs, plate the potatoes and bacon, little salt on the potatoes and either just a tiny bit of salsa or ketchup on them. Check the eggs, once they're done I throw them on top of the potatoes, break the yolks so they soak into the potatoes and place the plate on top of the pan I was cooking eggs in (flame turned off), it keeps it hot while I get dressed and sets the yolk into the potatoes some.

I can do the same thing with frozen sausage patties or links, I've done ham steaks (start from frozen) that way, breakfast steaks, kilbasa, even cooked some liver mush that way. Just have to watch it a little more carefully with the steak and livermush. I love my air fryer, I cook something in it at least once a day, it's easily the best purchase for the kitchen I've made in years.

We went out for brunch today and I had chicken and waffles Benedict.

It wasn’t the best thing ever but about halfway through the chicken and poached egg I realized I was probably eating mother and child at the same time. And that made me smile.
 
Whipped up some bacon/egg/cheese on english muffins......."accidentally" fried up 2 extra lbs of Bacon.....'Merica...
 
Ham, Bacon, Onion, Bell Pepper, Cheese Omelet with Grits (cheesy), fresh slice Maters, and Toast. Man, I was too hungry to take pic. lol
 
Blueberry pancakes....from scratch minus the berries that I freeze up every year. I swear the berries get sweeter after freezing....

As always - 1/2 cup plain greek yogurt with 2 tbls unsweetened fruit puree, coffee, juice
 
Normally, just black coffee.

Today being Saturday, eggs from the back yard and bacon. Oh, and black coffee.

To clarify, I have chickens, so they ain't just random eggs I found. Lol.
 
Randy's breakfast casserole
Take a bag of shredded hash browns spread them in a 9x12 casserole dish Scramble 10-12 eggs and pour over hashbrowns Place in 350 degree oven for 20-25 min (until eggis done)
Fry bacon or sausage or both
When egg is done spread bacon and sausage
spread layer of grated cheese (your choice)
cover with phillsbury crescent dough and return to oven until top is browned

Eat and enjoy
 
The usual Sunday morning breakfast around here, Aldi's Pepper Bacon, eggs over easy, and stone ground yellow grits, black coffee. Don't get any better.
 
We got lazy this morning. Usually on Sunday we have bacon and eggs, waffles, and coffee. But this morning all we had was a toasted corn muffin and coffee. :(

Ya killin me with that bacon. RS still hasn't picked up any. We ate breakfast last night at 10:30 at the "Cookie Barrel", STILL full.
