What's for dinner?

I've had a lot of different smoked meats before... not smoked Bologna. Sounds interesting. Where did you find that?

Someone that stayed to help Friday night at the bbq last year brought a whole bologna and asked if we could smoke it.

I honestly thought it was the stupidest thing I’d ever been asked but we had some room so we did.

I swear to you that 10 or us are that entire damn bologna when it came off in the morning. Hella good.

We just spent the last four days at Saint James Plantation, by Southport, NC so we've been eating out. :) But we came home today so back to the usual food routine. Tonight, Charleston crab cakes sandwiches on sandwich thins, with American Cheese, my wife's Mayo & Ketchup spread, Cole Slaw, Alexia Fries and Bushes Beans.

Rehearsal dinner was at Mountainview Restaurant in Pilot Mountain, so we had the buffet.

Their nanner pudding didn't have meringue.

Pressure Cooker Smothered Pork Steaks Over Brown Rice!

Quick dinner tonight:

Simple ingredients:
2 Pork steaks rubbed with rotisserie chicken seasoning
1 Yellow sweet onion
Dash of Worchester sauce
Dash of garlic powder
1 Can Cream of Mushroom
1 cup water & 1/2 cup heavy cream (not pictured)

Quick, easy and it turned out pretty darn good! Next time I'll use less water so the gravy is a bit thicker.

Going to a neighbors for a cookout and a few cocktails. So I need to prep a few appetizers. Just going to do some wacky stuffed peppers on the Green Egg.

Grilling out again. Pork chops, sweet potatoes, and some experimental bacon Mac and cheese.

Edit:
Turned out pretty good. I must have gotten the amount of macaroni mixed up on my head, because I had too many noodles for the amount of cheese sauce I made. Still pretty tasty.

Sorry for the failure to update, but we were on a time crunch getting to the neighbors. I stuffed some peppers with hot italian sausage and cheese, some with plain cheese and some with buffalo chicken dip. Also had some with cajun cheese curd inside. I also used some sliced colbyjack with jalapeño, chipotle and habanero on top. Cooked them on the Green Egg until they were tender and had a good smokey flavor. It was all good.

Tonight, Scallops coated in flour, cooked in olive oil and garlic. Then put on top of whole wheat pasta with Romano Cheese.scallops 007.JPG
 
First time doing ribs on a weber. Did 4 hours at 250. They were good, but might of needed more time since they were tough. For instance, the bones were not loose yet. Definitely need to work on my timing. Going to have leftovers tonight and will try heating them in the oven for an hour or so.

Dry rub the night before.
