What's for dinner?

Last night and tonight: country fried steak, mashed potatoes, gravy, apples

Tonight, Charleston crab cakes sandwiches on Whole Wheat Sandwich Thins, with American Cheese, my wife's Mayo & Ketchup spread, Alexia Fries and Bushes Beans.crab cakes 001.JPG

Pretty good. Could have been done a little more on the bottom. Not quite perfect. I used chicken breast so the kids would eat it, but that was a little dry. Chicken thighs would be better. Flavor was good. I added some spice to mine since I like hotter foods. The garlic and veggies were very good. I think I add more next time.
 
What is bacon chicken? Seems like a total oxymoron.
I am the chef in the house so anytime you see something unusual, its me. When its my wife, things are more simple, like this. Literally you put chicken (mix of skinless breast and thigh best) in a crock pot then put 1/2 pound bacon over the top. Cook on low for 6-8 hours then shred so it absorbs all the juices and fat. AMAZING!! and easy.

I also noticed my thumbs forward grip on dat plate! NICE! ;)

Good plan. I try to avoid chicken in the crock pot normally because IMO it is always dry and flavorless. Or at lewst the breast do. If it isn't impossible due to weather it's on the Green Egg or smoker. But the bacon cheat sounds well worth trying.

The word dry will never leave your mouth when eating this. It’s sloppy wet! Just don’t look in the container of leftovers the next day in the fridge... all that “juice” solidifies into what it REALLY is, bacon fat juice!

So basically my cardiologist would not appove. I should probably stick with my Green Egg cooking.
 
Petite Fillet pan seared with roasted potatoes, sautéed green beans w/ shallots. Threw in a side salad with a homemade white wine vinaigrette. The steak was in the freezer leftover from the breakdown of a whole tenderloin.
