Enough poultry!!!

Tonight is meatloaf, spinach/tomato saute over pasta with blue cheese sauce.
 
$9 Porterhouse cooked in cast iron on the stove and under the broiler. Finished with some butter, fresh herbs and garlic. Sautéd baby broccoli and a baked sweet potato. Deboned the porterhouse and split it with the wife because you know I am watching my figure during the holidays! ;)

Burrito night. Marinated chili rubbed chicken, cilantro lime rice, homemade corn salsa, guacamole, salsa, roasted poblanos, saute'd green peppers and onions. Also a few double IPAs to wash it down.

You got a world famous recipe to go along with post?

My wife is using Mama Dip's recipe, but with deer burger instead of beef.
2 lbs burger
1 stack of saltines, crushed
1 egg
1 jar chunky salsa, mild, medium, hot, your choice

Mix it all together and bake at 350 for about 1 hour
 
Been feeling kinda yucky this past week. Time for chicken soup. Chicken, herbs and veg are simmering. Noodles made. Putting it all together in an hour.

Also, there will be salad (need more green today). Mixed greens, pears, walnuts, rocquefort crumbles and pomegranate vinaigrette.
 
Boar’s Head wieners with a chow chow I made of mixed pickled veg, pickles, jalapeño mustard (from my hometown in WI), horseradish (also from hometown), and celery salt. Relish looks better on top so I had to have a second for its photo op... [emoji12]

Pressure Cooker Leftover Ham & Green Pea Soup!

Threw together a simple supper using some leftover Thanksgiving ham.

Ingredients:
Leftover ham
Frozen carrots (1/2 bag)
Split green peas (1 bag) green peas
Frozen pearl onions (1/2 bag)
Chicken broth (64 oz)
Garlic powder
Salt

Dump everything in the pot.
Set on menu #02 and set cook time for 15 minutes.
Natural pressure release.

Canned salmon, a half a sleeve of saltines crushed, 1/3 cup mayo, splash of apple cider vinegar, splash of hot sauce, old bay, black pepper, 2eggs. Mix everything up but the salmon and give it a taste, it should be pretty tart tasting add in the salmon and throw it in the fridge for 30mins. I made up a sauce to go with it, mayo apple cider vinegar hot sauce and black pepper.

I’m down. The wife might be less than happy with me. I do have a bunch of Spanish Mackerel thawing out for later in the week.

Here's a cheaper option. There is a lot of 'salmon' fishing off the great lakes. We fished the Salmon River in NY growing up. Plus a handful of other bays, creeks and rivers. You don't get Alaska size like the 45 lb gal on my wall, but you can get numbers of 15-25 lb fish. Usually they run in September up there so the weather is perfect. I couldn't make it up this year, but might be able to help arrange an outing next year. We can all bring lever action rifles and revolvers to obey the Safe Act too.

Wednesday's are always short on time so it was super simple vegetable venison soup. A frozen block of venison stew meat, can of diced tomatoes, green beans, peas, limas, chicken broth, water, and tomato paste went in the instant pot. Let it cook and release pressure then left it to simmer while at church. Came home to a tasty winter meal.
 
Tonight, Cauliflower baked with Caramelized Onions, Garlic, and olive oil. Then mixed with Whole Wheat Pasta. Romano Cheese.Cali & onions, 004.JPG
 
We’ve got a church party to go to tonight. We were told to bring heavy hors d’oeuvres so I’m smoking chicken wings. I may just sit at home and eat chicken wings by myself.

It's a leftover night around here...Im having pulled pork bbq and green bean casserole, mama bear is having pintos and cornbread, boy child is having pot roast and pintos mixed up, girl child is having chicken legs and mashed taters.
The real treat here is getting a fridge cleaned out lol
