Cook potatoes without using the oven and taking all stinking day. Cut up potatoes and toss in seasoned salt and olive oil. Cook in the air fryer for 15 minutes.

We tried chicken, it was meh and cleanup was a pain. Potatoes are our favorite now.

Went to Daryl’s B’cue tonight in Greensboro. Had the babyback ribs. Eehhhh, did they change the sign from a Sizzler or something? Was going to go with wings but waitress said she hates spicy food and thinks the ‘Buffalo’ wings are great. Eeeehhhhh, WTF is going on there? Had 2 Red Oak Ambers that were good though.
 
All that plus two pureed fresh jalepenos. Gotta let the flavors marry up overnight for the pork ribs tomorrow.
Just barely enough Texas Pete to overcome the brown sugar in the bottle sauce and kick it up in front while the jalepenos and red pepper flakes give it a slow burn follow up.

We did fancy-schmancy hamburgers tonight. Put a half rack of pork ribs in the crockpot this morning with cider vinegar, Southern Comfort, black peppercorns, and a little of my sauce.
Low and slow for about 4 hours. Ripped meat off tbe bone, chopped it up, mixed it up with some hamburger, tossed it on the grill, and basted with sauce as they grilled. Roughly 1/2 lb patties.

Buttered and toasted the buns, slapped those bad boys on with a couple spoonfulls of this (hot) sauce (two pureed jalepenos not pictured lol)

and topped it off with a spoonfull of homemade slaw to balance the heat

Hot, spicy, creamy, crunchy, firm bread, so juicy it runs down your arms, messy as hell...everything you want in a burger lol.

I don't do these very often at all because they are kinda labor intensive, but when I do, they are always a big hit with the family.
 
Start with Italian Gemelli pasta, with baby portobello mushrooms, mini peppers, shallots, garlic, and parm regiano in a butter/cream base... Add some grilled hot Italian sausage, fresh chiffonade of basil, and top with grilled/smoked giant diver scallops... Pair with grilled asparagus and a nice Spanish Rioja and boom... Dinner...

My mom has heard the wife and I talk off and on this winter about getting a smoker.
Well, moms early birthday present to me is here lol. Put it together Friday afternoon, fired it up and burnt off the shipping gunk yesterday, then seasoned the grates (cast iron, yay!) with a little veggie oil.
It looks like this right now...and smells great lol

Just opened her up to baste the meat and it's startin to look real good. Should only be a couple more hours.

Nice. Great dish. I had some Jambalaya in ATL this weekend. It was horrible. Half a bottle of Tabasco made it edible, but not great.

Nothing is as good as well done Cajun food, or as bad as poorly done Cajun food.
 
Well, tonight for SUPPER we had rice and sausage links cooked together, Sunday peas [that what orphan kids call garden peas. They always served em on Sunday], with new taters cooked in with em and some Corn on da Cob. That's what we had for Supper.
 
Quick dinner tonight. Pan seared Salmon Teriyaki over brown rice w/avocado, carrots, sugar snaps, cucumbers, pickled radish, carrots and lettuce.

Grilled up some nice thick boneless pork chops, grilled the squash and zucchini, stove top roasted baby taters and onions.

Salmon baked with lemon pepper, honey and a slice of lemon. Creamed spinach on the side.
 
Some dogs, brats, and 1.5 lbs chicken breast. And the appetizer was a bacon wrapped pork tenderloin that was too delicious to have time to get a picture of.

Tomorrow is Derby Day!!!

Kentucky Hot Brown Casserole, chopped salad, Bourbon pecan pie and Juleps (of course).

Sunday is Cinco de Mayo. Steak Fajitas, Roasted corn with chipotle/lime butter, black beans, flan and magaritas (of course).

Last night I marinated and grilled some pork loin chops, grilled asparagus, fresh cantalope, radish, leftover peas and corn.
Fired up the firepit and drank some beer while the kiddos made smores.
Life is wonderful lol

Its the wifes birthday today, but she worked last night and has to tonight, so tomorrow Im putting a 4 lb pork loin on the smoker.
Her bestie is coming over to hang and have dinner and a couple drinks.

Spent a day at the data center downtown again waiting for a shipment that never arrived. Would have been more pissed (still was really pissed) but we hit up the Midwestern again and hung out at the bar and had some cocktails after lunch. Got the pastrami again with a side of candied bacon jalapeno potato salad. The burgers looked amazing, I'll have to get one Tuesday and see how tasty they are.

Got tbe smoker rollin about 200 degrees with a 6 lb pork loin. Dry rubbed, injected with pureed garlic in cider vinegar, with applewood chips for smoke and apple juice spray to keep it from getting too dry. When it hits about 140-145, I'll pull it and wrap it in tinfoil with more cider vinegar and apple juice in the foil with it. Back on till it's about 180-185. Should be able to cut it with a fork by then lol.
I'll fire up the grill when it's about done and put a char on some corn on the cob, marinated squash, and green beans tossed in olive oil and parmesan cheese.
Fresh cantaloupe to round it all out.

Dinners at 6 ish...bring beer lol

Sauteed brussel sprouts, broccoli, mushrooms, and beef on a bed of rice. Cooked in olive oil, seasoned with salt, pepper and Montreal Steak seasoning. Horseradish sauce on standby if things get too bland.

The ingredients were specifically chosen for their pro testosterone and anti estrogen properties. Sorry, soy boys...

Went to J.Betskis for our 12yr anniversary last night...

Smoked kielbasa, pierogis, and poached shrimp to start...

Had soft shelled crab with paprika butter and potato cakes for my main... Hard to tell scale from the pic but they are bigger than my hand...
