One of my wife's oldest friends, she is 81, shared an interesting experience that has us seriously considering going wheat free. (Not gluten free, though they are linked).
Her friend was on many different medications including high blood pressure meds. That one in particular was 20mg twice a day.
Last year she start feeling more sluggish. Couldn't walk as far and had difficulty finishing her 1 mile swims.
Having earned two master degrees in chemistry, she knows how to do research. So she researched her symptoms and came across studies linking all of them to wheat.
She eliminated all wheat and wheat products from her diet.
Longer story short, she is down to one 5mg pill of her blood pressure medicine PER WEEK. She is back to exercising 45 minute as soon as she wakes up, she swims 1 mile 3 time a week and walks several miles a day.
Her 95 year old partner had been to weak to walk much at all and most days he could just get to the sofa. So she tried this diet change with him 3 months ago. Now he can walk several miles again, and they enjoy their walks to the cafe for coffee in the morning again. He too has been able to start reducing his meds.
It seems that all the regulation of agri-business has change the wheat in a manner that is not healthy for a segment of the population. It adversely impacts the autoimmune system which controls so much that go on in our bodies.
My wife 4 different autoimmune disorders. I have one, eczema. So we are going to try this.
If we are successful, I'll report back results.

Personally I think she was trying to keep me from eating the cookie dough she was making. ;)

My wife made a huge chocolate cake for my mother's 80th birthday this weekend.
Made from almond flour and coconut flour. No cane sugar. Only coconut sugar.
So no wheat and a vey lie glycemuc index.
Coconut sugar also has a very low GI. And the butter cream frosting she made with it is awesome.
Have to wait unto Saturday to see how the came tastes. If it is good, she might have to make a small business out of it. No bakery in the triad makes this kind of cake.

My wife and I struggled to lose weight until we cut out wheat and sugar. Been off it for a few months and haven’t felt this good in a decade. It sucks at first but after a week of feeling like crap you don’t miss it.

In 2012 I was on medications for reflux, allergies, and pain (spinal fusion). I was 38, I weighed almost 250 lbs. and I felt like hell.

I went paleo and removed wheat, soy, rice, corn, legumes, and dairy from my diet for about 3 months. I dropped 35 lbs in the first month and more importantly was off all medications within a matter of weeks. I went from taking 4 aleve and 2 flexeril a day for my back to absolutely nothing.

I slowly added some things back into my diet one at a time to see what the real trigger was. I can eat Corn, Rice, Dairy, Soy, etc. with no problem. Minor digestive issues with Corn just because I don't eat it much.

If I eat anything that contains wheat I immediately get nauseous and sweaty. Within a half hour I have reflux issues and I'll be lucky if my digestive system is back to normal within 72 hours. I also start experiencing aches and pains of all my old injuries again (of which there are many beyond the spinal issues....).

5 years later I'm hanging around 22o still and eat pretty much what I want minus wheat. I do try to limit the sugar and carbs somewhat and I stay with whole foods over processed most of the time. Still feel a helluva lot better even though I'm 5 years older and on the wrong side of 40.

Allergies were far less severe, acid reflux issues disappeared. Combined with 30min five day a week lifting sessions I dropped 30lbs. I attirbute the reduction in joint pain to the lost weight and stretching/excercise, as it's still gone. In the end, p.i.t.a to avoid unless you cook all your meals so I mostly gave up the diet and the allergies are back.

Almond flour was pretty disappointing and I didn't feel so hot after consuming things made with it.

Made at home from scratch makes the difference with Almond Flour. All the ingredients in the cake she made are organic. Almond flours is just almonds. Nothing else.

No allergy to nuts, and maybe it was the copious grease or dairy in the things I made with it, but it did not agree. Seemed like a great component for desserts but I never got around to making any.

I fell off the wagon this week. Had bread, donuts, etc. I feel like hell. Wheat is really bad for our bodies, especially what’s available to us today.

I don’t like almond flour at all. Coconut flour is better but it sucks too.

Went low carb/sugar and dropped 40 lbs. I have been working some things back in, Organic bread for toast in the morning, tortillas for dinner sometimes, sweet potatoes, and milk. No pasta and very little rice as a side. Picked up about 12 lbs since easing up on the keto diet. But IMO that diet is not long term. What I'm doing know is more long term. Blood pressure meds are gone. Cholesterol stayed up unfortunately but it will be retested early next year. Aches and pains are WAY down. Energy is up. Testosterone went back up to normal too.

I can't do corn tortillas at all though. Man do they make me feel terrible. And I really liked corn. Oh well. But doing more fresh veggies and stuff from the garden which helps too.

My cravings for sweets are pretty much gone. If I have one I make a fruit smoothie or eat some trail mix and I'm good. When I do eat sweets they taste SOOOOO much better because I'm not over running my body with sugar anymore. Which also means I can't eat as much anyway. We used to get cravings to eat out, but we are eating so well at home we really don't care about eating out either. One of the things that made it so successful is we can eat all out meals at home every day. Eating out is harder to do.

We use three flour alternatives here. Well four depending on how you count....

Blanched almond flour (Trader Joe's)
Almond meal (Trader Joe's)
Coconut flour (Trader Joe's)
Tapioca Flour (Bob's Red Mill)

The almond flour and meal combo make good low carb pizza crusts and breading for veggies to be oven baked.

The coconut flour is best in baked goods in combination with almond in a lot of recipes.

The Tapioca flour is really good for breading and frying and most closely approximates wheat flour. It is NOT low carb though. It is gluten free/wheat free.

Lost 100 pounds doing LCHF. Gained 40 back when I stopped paying attention to carbs despite swimming 4 miles a day. It is starting to come back off again. My goal is to look like someone who can swim as far as I do. :D
 
By the way, If the Cake is good, I'll get the precise recipe from my wife and post it. Maybe I can get to make one on request from time to time. Only towns with a high concentration of wealthy liberals have a dedicated gluten free bakery. Risk is too high to try and make gluten free anything in a bakery that also does regular stuff.
 
My wife started us on the Paleo Diet thing and it actually works well ... when you are at home. The problem for me was the lunch thing with grains, salt and sugars ... it’s hard to do if you’re not brown bagging it unless you do salads and breadless meat. The worst things are refined sugar, flour and dairy to deal with on the diet but in summer with fresh fruit and vegetables it is easy ... and the grilling beef, venison, etc or a nice salmon steak ain’t bad at all. I do notice that when I eat something crappy my stomach does let me know.

Don’t start by trying to fill back it, just jump straight to meat, fish, chicken, eggs and low carb vegetables. Cut out all caffeine and bump your salt way up the first two weeks. Drink water, and only water, as much as you can stand. No exercise, you’ll drop 10-15lbs in a week. After a few weeks you can start thinking about what you want your real diet to be.

BTW, the salt is to prevent headaches, if you don’t drink some broth you’ll be hating it.

One thing I like about this start is that it is binary, either you’re on it or you’re not, there is no a little of this or a little of that. The downside is that it probably isn’t a good long term solution.

Or you could just fast from now until Thanksgiving.
 
This taste exactly like Devils Food but no wheat.
Devil Food Cupcakes

15 oz. low salt black beans (drained)
1/2 teaspoon pink salt
1/2 teaspoon baking soda
1 Tablespoon baking powder (aluminum free)
5 Tablespoons coconut oil
1 Tablespoon vanilla
6 eggs (room temp)
1 1/4 cups xylitol
5 Tablespoons unsweetened cocoa powder

Instructions: Pre-heat oven 325. Place all ingredients in blender and blend until thick like pudding texture. I do mine 3 minutes. Spray muffin pan with coconut oil spray or line with cupcake papers. Fill half way. Bake 20 to 25 minutes. Insert toothpick if come out clean they are done.

Makes 18 cupcakes Cupcake: 97 calories each, Carbs 8.5, Protein 3.4, Fiber 1.6, Sugar 0.4

Cream Cheese Buttercream1

(8 oz) packs cream cheese, softened (room temp)
1 Tablespoon almond milk
4 Tablespoons butter, softened
1/2 teaspoon vanilla extract
1/2 cups xylitol (ground to powder plus 1 teaspoon arrowroot powder)

Instructions: Add softened cream cheese into large bowl. Pour in milk, butter and vanilla extract. Mix until well combined. Pour in half of the powdered xylitol*.Mix until combined. Add the remaining powdered xylitol*.Mix until smooth and fluffy. Use a spatula to scrape down the side of the bowl if needed.*Notes: If the frosting is too thick, add in a few drops of milk at a time and stir after each addition. It doesn't take much liquid to thin it out. If you add too much milk, you'll have to add more powdered xylitol* to thicken it back up which will make it sweeter.

Icing: 18 servings per serving: Cal 79 carbs 3.9 protein 0.9 sugar 0.5

9x9 sheet pan works well, 1 cup xylitol is plenty sweet for me with cream cheese icing.

PSA: xylitol (as mentioned in the above recipes) is VERY toxic to dogs, so please don't share anything with xylitol in it with your furry friends.

My wife and I have been gluten free for 5 years. If I accidentally get some it tears up my intestines. Throne time for hours. We have switched to Einkorn flour. It's still made from wheat. But it's an ancient wheat like from 5000 years ago. It's not been genetically modified like the wheat you find in the grocery store. She's made bread, cookies, muffins etc. with it and I have no reaction to it. It's not the wheat/gluten that's hurting all of us. It's the genetically modified crap Monsanto engineered.

I also heard that they use Roundup on it to kill it so they can harvest the entire crop at the same time. Yeah, they say it goes dormant in X number of hours but I don't buy what they say. There's bound to be some trace of it in the crop that we are ingesting. The Einkorn wheat is all natural and no chemicals are use on it. If you're interested, it's easy to do a Google search and read all about it and learn how the store bought flour is actually bad for us. Einkorn all purpose flour can be used as a direct replacement for the store bought stuff.

If your goal is to go gluten/wheat free, then your unsweetened iced tea is safe. Most beer is out since it's made with barley, hops and other gluten containing ingredients. There is a gluten free beer out there but I don't know where to get it or what it's like. Wine should be OK. Most store bought cakes, cookies, breads are a "no go" unless it's specifically says gluten free on the label. Chex and Cheerio cereals are OK. Fritos, most potato chips (not Pringles) are good. Most anything made with corn is alright except Bugles. Just read the allergen info on the back of the product. If it says contains wheat then put it back on the shelf.

You have to be careful with fast food. We always order our burger with no bun. Hardee's and Chick-fil-a fries are alright. They are fried in a dedicated fryer. If you have to follow a strict gluten free diet then you can get cross contamination from breaded products in a shared fryer. McD's fries either contain or are coated with something that contains gluten. Watch those salad dressings and sauces. Wheat is often used as a thickening agent.

If anyone has any questions about starting a gluten free diet, I'm here to assist if I can. If you are having some unexplained medical problems and you suspect it could be related to our wheat/gluten, I suggest you try a little experiment and go wheat/gluten free for two weeks. It takes about that long to purge it from your system. You may be surprised at how much better you feel. If you don't see any difference then you can resume your normal eating.

Personally, this works for me when I did the Keto diet.

I drink coffee but cut out all sodas unless I am out and nothing else. And then I can only tolerate dark sodas, sadly after years of a Sundrop addiction. Diet sodas are different. Some folks tolerate them and some folks get the same sugar reaction with them that creates fat with regular soda. Best bet, go off completely for a month or two. My guess, the results will be so good you will not want them back. When you get to your target weight you can start to re introduce things to see what works and what does not.

I use the MIO additives if I need something similar to Gatorade. I'm sure the flavored ones would work well for general use. But I mostly drink water now.

I don't see unsweet tea being a problem.

For alcohol the ultra light beers are OK, but still have carbs in them. They are just the lowest levels out there. Straight alcohol has not carbs. I've become a fan of Jim Beam Honey.

I drink the following:

Coffee with cream only (real stuff either half and half or heavy cream)
Coffee black if I don't have real cream
Water. Lots and lots of water.
Unsweetened Tea (no artificial sweeteners added, just plain) (usually this is with meals out....)

Alcoholic beverages:
Dark dry red wines.
Whisky
The occasional Cider (not low carb, but gluten free.)

I haven't had a soda, real or diet since about July of 2012. I had about a 2 liter a day habit before that, usually Diet Pepsi. I was in Sheetz a couple of years ago and thought "hey maybe for old time's sake...." and bought a Diet Pepsi. I took one sip and poured the rest out. It was nasty..... Amazing considering how much of it I used to drink.

I had an odd week last week. I've found that I can add in one carb heavy meal a week and be ok weight wise. But with our power outage I ended up eating from a local sub place, 12" sub, and then ordered pizza the next day. My back has not hurt this bad for months! I initially chalked it up to cutting wood and moving it around. But I really think it was the carbs or the wheat in all that bread. It's been a week and my back is starting to feel a bit better. My normal exercise and stretching did not seem to help at all. Like RR mentioned, I think the carbs kicked up the pain of that old back injury.
 
My son likes vanilla cake so my wife made one just for him following the chocolate recipe minutes the chocolate.
He loved it. With his crohns wheat gets him feeling bloated. So he really enjoyed this cake. No boating at all. Just wonderful cakeness. [emoji6][emoji28]

It's possible you have a wheat/gluten sensitivity. My wife complained of aching joints until we went gluten free. It took two weeks of a strict gluten free diet to purge the gunk out of our systems but she's been feeling great ever since. Wheat/gluten sensitivity can manifest itself in many ways.

I'm sitting here eating some home made chocolate chip cookies my wife made with the Einkorn flour. They taste great and I don't get a reaction from them.

Denmark has so severely restricted the use of nitrogen based fertilizer that the wheat they grow has very little protein. They can't even sell their wheat on the global market because of it.
Government regs mess up the food supply in the name of protecting us. Sure. No. The regs are for Big Agra to gain deeper control of the market.
Some state legislatures, likely D controlled, actually entertained regulations that would ban heirloom seeds and allow only hybrid seeds which must be bought every growing season.
 
I have got to try this. I have so many aches and pains, and major back pain (I have to go to a chiro every 3 weeks to be able to work) that it literally drives me nuts, lol. I have allergies, reflux, etc. Sounds like I would greatly benefit from it.
