Carole and I would be willing to pay a decent (20 an hour?) fee to anyone who will be willing to set up a day where you "walk us through" the entire process of sterilization (differnet methods), canning, sealing, labeling, checking and rotating preserved foods, from fruits to vegetables to meats. I figure we should learn enough to keep from killing ourselves in 2 days? Figure on maybe a Saturday and then afternoon on Sunday?

It's not rocket surgery, If I can do it anyone can.

Or the instructions that come with any pressure cooker.

It's really not that hard... just detail oriented.

Get a copy of the Ball Blue book. Basic cleanliness while preparing food; the canning process sterilizes. Happy to answer any questions; wife has a YouTube channel with some canning videos.. oldwaysnewtimes is the name.
Short version - pressure canning for meats and low acid foods; water bath for high acid.

The canning book covers what method to use for what foods.

Start with something simple like salsa or pickles; use ball or Mrs wages mix pouches. You can experiment with recipies once you get used to the canning process.
 
I realize you are wanting more hands on, but check Eventbrite.com to see if a class is being offered local. We just took a canning class a couple of weeks ago in Tarboro.
 
I was fortunate to have grown up with grandparents that canned everything. My gal friend did too. Thank God we were both apt pupils. I would suggest taking a ride through the country and look for an older farm house with a nice size garden....you’ll know it when you see it. Pay them a visit, ask if they can food. If they do, ask if you could hang around when they run a batch. You should be able to locate someone with 15-20 miles easy. You’ll make a new friend, and if not, move on to another. But, usually people of our irk are cautious but friendly and after a little vetting, you’ll be part of the family. And, you will have a local contact that can solve any problems and answer any questions you may have.
