It's more a rhetorical question- because I obviously have them. I try to be sensible- I managed to keep my gun collection to be NATO spec- 9mm, 7.62, 50, 12gauge (ok, the wife has a .380 but I don't reload for it, and 300BO is cutting the spec kind of close).
But just in 30 caliber, I have:
90, 110, 150, 165, 180, 200, 208, 220, 230 (and some weights have multiple brands/types)
Being rational, I have one deer hunting rifle which I have a perfect load developed for it. I also have a 308 which can do both super/subsonic (1:10). I also have a 300BO pistol. I have developed very accurate loads for each of them.
So why do I keep buying new bullets to try out?

- I'm cheap- if it's on sale, I end up buying it.
- I'm cheap- my very accurate loads are also typically expensive rounds. I need plinking ammo.
- I'm practical- need to have a variety of potential loads if there's a shortage/discontinued ammo.
- I'm getting into subsonic- different needs demand different bullets
