I put away some of "The Girl's" eggs in the lime mix back on 2 Feb 23.
Broke a couple out to try this morning and outside of being a bit "runny" they were fine..
Kris sez if I go thru Sunday with no GI issues it was a success.. 😁

I've got chicken and quail eggs glassed since November.

I forget I have them and should really try some to see if I want to do more this year.
thank you. This forum reminds me of how I know nothing, and what great sources of info some of you guys are.
 
Just fried up four in the leftover grease from frying wild hog sausage.

They cracked fine but felt a bit leathery as I pulled them apart. The yolks were lighter and less viscous than fresh. The flavor seemed a little off, but the runny yolks were riding atop a bit of the sausage.

I think a better taste test would be to eat them alone and fried (or scrambled) in butter or bacon grease.

Had homemade sausage and a coupla eggs from "The Girls" this morning.
Still good at 8 months.. Float tested'em prior to cooking. GTG. Tasted great.
Prolly couldn't do anything but scramble cause they are a bit "runny".. 🤠
 
In our experience, we mostly use our water-glassed eggs for scrambled eggs and cooking/baking ingredients. Kinda same as @HawgBonz says, taste good but a little runny. Ours generally never make it past 6 months, but we are adding eggs to different containers year round in a rotational kind of way in case anything unusual "pops off" we have an accessible supply at all times.
 
We started putting away eggs this way a few weeks ago. So far we've got 3 dozen. Using 1 gallon glass jars. Have a total of 4, thinking of getting 4 more. Last winter we ended up having to buy eggs, which I don't want to do this year.
 
Not so hot for making hard boiled eggs, either. Really frag-ee-lay. 🥴

I’m pretty sure the old timers say they cannot be hard boiled because the pores in the shells fill and they cannot breath/release pressure.

Reckon this is confirmation. 😂

Tonight we will try some of ours…. Or I will anyway… 15mo in water, I keep forgetting about them.
 
We kept some last winter. After a few months they were pretty much only fit for scrambling. You could fry one occasionally but the chances of the yolk staying whole was slim. Didn't bother this year.
 
I'm good with the fact that there's a proven method for storing eggs for a good while w/o power.
Ya never know..
I reckon I coulda given "Egg Drop Soup" a shot with that batch.
As it turns out The Girls have no qualms about extra protein and thought them delicious. 😁
 
Like so many things on the farm, preservation wasn’t intended to get you through the apocalypse, just the winter.
 
Eggs and women both get the smell test. Usually all that’s needed.
