"De-cock" PROBABLY originates from the descriptive function of a "de-cocker" on a semiautomatic handgun.
Older phraseology which goes back decades, or more, likely used "un-cock" or "lower".
Either way, grammatically speaking, would be acceptable in today's usage.
I would just smile at anybody who has a hard spot with it either way and carry on smartly.
A minor detail, many "decockers" lower the hammer only most of the way, nor truly all the way down.
Is Decock a more modernized term? What would have been used back in the good ole late 1800's?

Yep. My wife got a'hold of her dad's .38 snubby when she was very young, pulled the hammer back and then couldn't figure out how to get it back to where it was. She shot the toaster.
