Blackstone or Similar Griddles

FYI - you can add Grill Grates to a flat top for a little more versatility.

But has anyone ever just added a steel plate over a grill to see how it works?
I occasionally use a cast iron griddle on my grill. I find it hard to regulate the temperature of the griddle but, I haven't used it enough to get it figured out.
 
You got me thinking about this. If you placed the potato on the griddle and placed a pan or something over it it would bake it.

I did a search and found no product like that. Want to invest in my idea?
I used the aluminum lid to my wok to cover the veggies with a little water helped steam the veggies. I have not tried a whole potato but did cook some diced up new red potatoes and baby carrots. Used the dome to speed up the cooking time

Get a cover... they tend to rust quickly.

We also oil ours with olive oil after every use, to prevent rust. Nothing to do with seasoning... just rust prevention!
I was told buy a friend that has a weekend home here at the lake.,says after using it and it's going to be a while before using again to smear the entire surface with crisco then cover with a piece of plastic.. but since I'm here all the time I plan to do lots of cooking on it year round. Wife bought 12 ribeys yesterday and 4 pounds of bacon and a couple packs of country ham. I can't wait to cook some blue cheese burgers. And toast the buns. I'm almost drooling
 
I wipe mine down with peanut oil after every cook, while still hot.Blackstone has come out with a seasoning mix that works well too.
My cover has sprung a leak, the griddle will have water standing on it, but no rust.
 
I just picked up a Blackstone 17" model and it didn't seem to get all that hot. Am I missing something?

If you are using the bottle amd not a 20lb with a hose. It probably wont get as hot. We had a 17 and it seemed the bottle couldn't push enough gas to get it HOT

The fellow I got it from had the plumbing set to use the 20# cylinders. I'll give that a try.
