Eating Healthy & Prediabetes

Aldi's is a good place to shop for vegetables and healthy food options at a lower price than most grocery stores. Extremely low carbs/high fat and intermittent fasting has worked well for me but you have to find something that you can stick with. With diabetes, the most important thing is to reduce sugar and carbs. You'll have to figure out the best way for you to do that. I've had several friends that have reversed their Type 2 diabetes with lifestyle changes, it can be done.
 
Mind sharing some of your cabbage recipes?
Aside from fermented ( sauerkraut) and as cole slaw, cabbage is really good fried. Try it with some onions, bacon, and garlic. It also works well in egg rolls (wraps are low carbohydrate and frying them in oil helps makes them hormonally neutral - use a pan not deep fryer ). It also works great in soups and stews, especially beef roast in a crock pot. Boil some up with some corned beef is another option. Lots of versality.

Mind sharing some of your cabbage recipes?

I've cut across the grain, so to speak, to create inch thick "steaks." Drizzle them with olive oil, then hit them with salt and pepper and bake in the oven until tender.

You can use that same technique on a quartered cabbage, too.

Another one we like is to cut up a cabbage and place it in a casserole dish. Drizzle it with bacon grease, layer on sliced up Hillshire smoked sausage and bake until the cabbage is tender.

We usually just do 350 for the temp.
 
Just about everyone I know in my shooting community has diabetes including me. They are all on one of the once a week injectables. Lost some weight and dropped their A1C a whole point or more. But now they have hit the wall. No more weight loss and A1C going back up but still below 7. Diabetes is an epidemic and its all due to modern lifestyle and diet. Something like 75% of working professionals spend their work day in front of computer screens.

You are so right. When I was working full time and going to college full time all I did was sit behind a computer for 7 days a week for 4 years. Gained around 45 lbs, not just from sitting, but the crappy diet. Eating fast food, grabbing snacks while doing research, and sugar loaded soft drinks for the caffeine to stay awake. No one’s fault but my own that I am in this situation though. I knew better, just didn’t do better lol.

As for our local Aldi, we are buying less and less from them. Ever since COVID, all of their produce and meats are going bad before expiration dates. Vegetables are lucky to last two days in the fridge. It’s really disappointing as that is where we shopped for most staples.

Cut off a quarter to a third and cop or shred finely. Throw into boiling water with your desired amount of salt. You can add more salt later if its not good enough. I usually add pepper, garlic, and chilipowder. If you don't like spiciness then go easy on the chilipowder/pepper. Boil it until desired tenderness. Makes 2-4 servings

Yeah the produce at this point is the same shit coming off the US Foods/Sysco trucks. Still a very good price compared to the grocery store.

The other nice thing is that they do tend to have everything. I hate going to one place only for them to not have a veggie or herb that you need for a recipe, and then having you drive back to the other store to find it.
