Huevos rancheros

I love eggs, I love Mexican food. Best of both worlds.

Lightly fried tortilla, Mexican cheese, two eggs over easy, sauteed onions/peppers/mushrooms, red and green salsa, sour cream. I would have added guacamole and refried beans if I had them.

I like to crisp up a base layer of carnitas to add to mine. Green salsa and jalapenos for me.
