My wife is in Alabama, nursing her dying mother. I am here with my daughter and grandson, starting a new job.
I decided to make tortillas with black beans, rice and habanero cheese. Reading thru a crockpot recipe for the beans, I saw that all the really good recipes recommended soaking the beans, for a full day if possible, changing the water at least twice. I had heard of soaking beans, but out of curiosity, looked to see why. It turns out that soaking them (longer is better) begins to break down some of the complex sugars in the beans, making them more easily digestible.
A very practical result of this is that they don't sit in your gut, ferment, and produce gas nearly as much. In short, you don't fart as much! lol
I found this to be true on a practical level. I also LOVED the beans. Made them with a bunch of onions, peppers, some garlic, onions, salt, and stewed tomatoes. Melted the cheese over them, and put them and rice over some fried tortillas.
I broke into a fervent torrent of Spanish, and had to call my pentecostal neighbor in to interpret the "tongues" I was saying. She said I was yelling "I MISS THIS GREAT FOOD I ATE IN MEXICO! I WANT A BEER!"
Seriously, though, soaking the beans extensively and thoroughly is a great step.
