Something very stable. Wide ish. 2-3 persons . Take fishing / duck hunting. Can portage on truck roof racks.
Don’t have room for trailer . Will be bymyself most of the time.

What have you had experience with?
 
Inflatable kayaks may be a solution for you. I think you can get them to carry multiple people and they would store in much less room than a canoe. You can buy battery powered air pumps for pretty cheap also. I have also seen guys throw 10-12 ft jon boats in the back of their truck but that seems like a lot of hassle to me.
 
A reasonably wide 14 foot jon boat can go on a roof rack and be handled by one person without too much difficulty and can handle enough motor to get you around with reasonable speed.
 
NuCanoe Frontier 12' and you can set it up for duck hunting. 2 people max dependent on weight but over stable. I can dance in the thing. 70 lbs dry weight, great company support. They are a little pricey, sometimes you can find them used. I have a wheeled cart to transport overland and it stores in the back.

I have a 16' Coleman Scanoe which is 42in wide in the middle. The wife and I have taken our 2 boys out in Lake Tillery and Badin with it before pushed by a 3.5HP outboard with no problems. I can stand up in it. Fit on the roof of our old Suburban with no real issues

Bring me five hunnant cash to 28097 and she's yours. For tree-fiddy more you can get the trolling motor, oars, a newer deep cycle battery and a 22watt solar panel that will keep the battery topped off while you're feeshing
