blasphemer!!!! pork shoulder should only be smoked til 200 degrees then pulled or made into sausage! "Pork steak" has to be something straight out of the north east!If you ask the meat guy real nice, they will re cut that chunk into pork steaks ( better then pork chops) and reseal then charge you the same amount. Or if you have the capability, you can make that into sausage, 99cts per lb as compared to $5.99 a lb.
