Some of might know that I buy Prime rib during the Christmass holiday when it goes on sale for $5.99 a lb then I cut it into 1 rib sections that weigh about 3 lbs and vacuum seal them and chow down during the year occasionally. Today was one of those days.
Coated the chunk with my homemade Montreal steak seasoning that I pulled off the internet and then tossed it onto the charcoal grill after warming it to room temp.
Cooked it directly over the coals that had some Hickory chunks to sear all the edges and then moved it off the coals to cook the rest of the way indirectly until 135 internal then wrapped and allowed to cool a bit.
I came out great, good char on the outside and very tender on the inside. Notice that the whole roast is cooked evenly with no over done outer parts. steak 1.jpgsteak 2.jpgsteak.jpg
 
Man that looks good. I’m sitting here at some dive crap restaurant in Augusta,Ga that someone recommended. Picknick table has writings like a service station bathroom wall.

The inside of that ribeye looks perfect. Bet ya get the meat sweats.

I've had some really good food at some really rough looking places.. Most times it was really good.
