for many years i've been buying whatever bulk waffle/pancake mix costco/bjs/sams has, following the recipe close enough, and adding splashes more milk until it gets just runny enough, but not too runny.
One of those $20 flip electric waffle makers does a decent job. And yes, pbj waffles, cheese and hotsauce waffles, omelet waffle sandwiches, etc.
wife said i was crazy and disgusting, until she started seeing them at hipster restaurants, but marked way up.
I was at a fancy dinner in france, and they had an appetizer that was like caviar and some french cheese on mini waffle quarters... i was like "maybe we're not so different after all"
My niece was over last summer and we bought her a big box of eggos, because she likes eggos.. i'm still struggling through the last of them
