I love our Instant Pot! I think my favorite recipe so far is ribs. I start them in the Instant Pot and finish on the grill. It’s fast and clean up is easy.

Thats what I was thinking. I guess if the time savings was a big enough issue this would be worth the counter real estate. I do a good bit of food browning and do a covered dutch oven for similar outcome but not as fast for sure. My Cast Iron dutch oven (LeCreuset 15qt) (Lodge 16qt) does the braising and put a lid on her and your off to the races at 425ish. I reckon either would get you there...and it can be healthful ingredients as you are the cook!Watching this thread as I have thought I might like one. I just don't know where I could possibly store another bulky kitchen appliance.
Replace the crockpot with an Instant Pot.I have thought an Instapot could be useful but my wife already enough appliances she doesn't use. I should do an inventory.

You are basically braising the ribs in the instant pot that is why they are coming out so tender. I have been know to braise ribs in the oven with white wine, vinegar, honey and few other things for about 2 hours before moving them to smoker. They come out nice and tender.
I don't have one I am with @Miss Lily I have no room for more kitchen gadgets unless they are going to get a lot of use. I have too much single use stuff already. I do have a few friends who wear by them. Personally I am too frigidity a cook to use one. I have to poke prod look taste while cooking so they might not work for me anyway.
It is basically using the Texas Crutch in reverse. Except you miss out on all the joys of the smokes fumes, beers and manly grunts.

I'd also add that it is very difficult to add the depth of flavors you get by barbecuing or smoking meat in an oven, crockpot or Instapot. I've been to many barbecue restaurants that cook meat perfectly as far as tenderness and moistness goes, but they lack the flavors of slowed cooked food over hardwood or charcoal. Even my 12 year old comments on how she doesn't want the stuffed peppers from the oven anymore. They taste much better when I do them on the Green Egg.
But sometimes at 7pm you have sacrifice flavor for speed and suck it up. We've all been there.

Wife got one for her birthday. She made some Carnitas for authentic style tacos with onion, radish, cilantro and and some cheese that were just insane.
