Buffalo Ranch Smoked Chicken.

I received this recipe off an email from MEATER (the company that makes the blue tooth thermometer I got for Christmas.)

They did it with a half chicken. I decided to go with 8 boneless thighs so I doubled the recipe below.

1 large garlic clove (pressed or minced)

1/2 cup buffalo hot sauce

1/3 cup ranch dressing

1/4 cup melted butter

1/2 tsp pepper

1/2 tsp crushed red pepper flakes

4 sprigs thyme finely chopped.

Mix it all together and drop in the chicken then cover and refrigerate over night.

The flavor of this marinade/dipping sauce is fantastic from the spoon lick I had after mixing.

I reserved about a half a cup as a dipping sauce in these little tupper puppers

I will see y’all tomorrow when I put these on the smoker.

Uhhhh. Well yeah. I licked it before putting the chicken in.

Then I used the spoon to mix the chicken in and I damn near forgot myself and licked it again.

It was a near thing.

I used sweet baby rays.

I’ve never really done anything with Buffalo before so I went with a brand I knew from sweet bbq sauces.

It’s got a really good flavor by itself.

Just put them on. Their recipe for a skin on half chicken was 375 till done. Figure 30-45 min.

Since these are skinless I’m going with 250. Should get more smoke that way too. Figure 1.5-2 hours.

I’m giving this Buffalo chicken recipe a solid 10. I don’t give 10’s often.

10 on ease of prep and on flavor. Best Buffalo sauce I’ve ever tasted. And I’ve tried them all.

Heat scale is between most restaurants medium and hot IMO.

Im gonna hafta try SBR's wing sauce.
I use their original as a cheater to add spices and stuff to for lots of grilled meats.

Just a note. Reserving some marinade for dipping is absolutely where it’s at.

Most of the heat cooks out of the sauce but dipping it brings back a ton of flavor.

Also, for some reason these thighs stalled on me at about 160. Never had that happen.

Flipped them an hour in and checked the temp to see where they were and they were at 145ish.

Figured I’d pull them off at 1.5. But they were at 165.

Waited 15 min and the hadn’t moved.

Bumped the smoker to 300 and it took another 20 min.

These were not huge hunks of meat.
