Chili time

    Having a Thanksgiving pot luck at the office today.
    I made two chilis.
    A medium heat Bourbon chili made with stew beef, black beans, jalapenos, and a Kentucky bourbon reduction (simmered 750ml of Bourbon down to about 350ml)
    Keeping the heat medium allows the bourbon flavor to come through.

    Second is Ghost of Tastebuds Past.
    A 5%er chili. Jalapeno, scorcher Ghost and Carolina Reaper peppers.

    Future variation: a chili with no meat. Use diced boneless leg of lamb.

    Lamb isn’t meat? That makes being vegan slightly more palatable.

    Made a delicious green chili pork stew this past week, gotta tweak it and try again next week.

    I use black beans. But sparingly.
    Sometimes with no beans, just beef.

    Sounds interesting but I'm a chili purist and I like beans. Already made 2 batches this year. One had 3 different chili powders: ancho, pasillia and chipotle and was very tasty. The other had the homogenized chili powder which actually has like 6 different spices in it and it was good too as always.

    I'm a purist also...
    Carroll Shelby chili mix, just follow the recipe and it's great every time!

    Add a box of Jiffy Corn bread mix to your shopping list for a perfect meal.

    We’re a Carroll Shelby Chili Mix household too. Have been for as long as I can remember. I like it over white rice with plenty of chopped red onions and crumbled Fritos on top for texture.

    Recently, my wife went to prepare it and discovered the pantry was bare. She went online and found a recipe for the spice mix. The result was identical. You might wanna try that. ;)

    I don't prefer my wife's scratch made ANYTHING!
    Her only cooking skills are: buy a box and FOLLOW THE DIRECTIONS!

    It used to be called Carroll Shelby's Outhouse Chili and came in a little brown paper bag. It made some good chili. But, you lost me at the Jiffy mix. Cornbread ain't supposed to be sweet.

    I do add some Chedder, Diced jalapeno to my bowl.

    Agree, I've had better corn bread but cooking skills are very limited in this house!

    My wife's Thanksgiving shopping list has "Jeppo Cookies" ingredients listed...

    As long as she gets the Spicy Corn Mac & Cheese right, there will be no problems!

    BTW, I have no guns since that fateful fishing trip :(

    Are beans purist? Where did chili come from?

    Texas Red Chili has no beans.

    Exactly, you can't be a "chili purist" and also want beans in the chili!

    New Mexico isn't too far off - it adds some veggies (typically diced tomatoes), but that's about it.
